couldn't find what i was looking for so i made it up as i went along. you could use cooked chicken instead of the fake stuff if you want and switch the kind of soup and spices for a different flavor.

2 large potatoes, peeled and very thinly sliced (i recommend a cheese slicer)
10 ounces Campbell's half-fat condensed cream of mushroom soup
10 ounces 1% low-fat milk
170 g vegetarian chicken strips, about a cup, i use yves
1 head broccoli, cut in 1 inch pieces (about a cup and a half to two cups)
1 vegetarian chicken bouillon cube
1/2 teaspoon garlic powder
1 red onion, coarsely chopped
1 teaspoon dill
1/2 teaspoon dried chipotle powder
1 cup low-fat cheddar cheese, shredded
1/3 low-fat parmesan cheese

Steps:

  • grease casserole dish, preheat oven to 350f.
  • layer all ingredients in dish, sorta mix with a fork as much as possible, cover with foil.
  • bake for 45 min-1.5 hours depending on how thin you cut potatoes. mix gently halfway through and see how cooked potatoes are. if desired take foil off for last 10 min to brown on top.
  • serve with salad and a crisp white wine.

½ cup milk
¼ teaspoon garlic powder
2 cups fresh or frozen broccoli flowerets
1 (10 ounce) package refrigerated cooked chicken breast strips
¼ cup grated Parmesan cheese

Steps:

  • Heat the oil in a 10-inch skillet over medium heat. Add the potatoes. Cover and cook for 10 minutes, stirring occasionally.
  • Stir the soup, milk, garlic powder, broccoli and chicken into the skillet. Sprinkle with the cheese. Heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until the potatoes are fork-tender.

Yummy alternative to chicken nuggets for the kids. I'm not a broccoli fan in general, but this is really tasty.

1 teaspoon vegetable oil, or as needed
1 (16 ounce) package frozen chopped broccoli, thawed
1 cup bread crumbs
1 ½ cups shredded Cheddar cheese
3 eggs
½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon garlic powder

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet with oil.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil; add broccoli, cover, and steam until tender, 2 to 6 minutes. Let broccoli cool at room temperature until cool enough to touch.
  • Transfer broccoli into a large mixing bowl. Add bread crumbs, Cheddar cheese, eggs, basil, oregano, and garlic powder to the broccoli; mix. Shape into nuggets or fun shapes and arrange onto the prepared baking sheet.
  • Bake in preheated for 15 minutes, flip, and continue baking until heated through and beginning to firm, 10 to 15 minutes more.

These healthy finger foods are ideal for the toddler expressing independance. I couldn't get my 19 month old daughter to eat anything until I cooked these.

2 chicken breasts
2 egg whites
4 -5 large potatoes
broccoli (you decide how much)
breadcrumbs
butter (a little for the mashed potato!)
pastuerized whole milk (again little for potato)

Steps:

  • Pre boil broccoli and Potato and allow to cool. Broccoli takes around 20 minutes and the potatoes 20-30 minutes depending on how much you use.
  • While potato and broccoli is cooking empty bread crumbs and egg whites in to seperate large bowls. (if you prefer you can use a ziploc/resealable bag for the breadcrumbs).
  • Once potato and broccoli has boiled, empty water and add broccoli to potatoes. Mash as best as possible and add a little milk and butter. (NEVER add salt to a young childs food)Dont make too runny as you will need to mold it!
  • Roll potato/broccoli into a ball a little smaller then a golf ball. Roll in the breadcrumbs ans then place on a plate.
  • Cut the chicken into portions you think will be suitable for your child. Dip in the egg white (make sure the whole nugget gets covered) Then place in breadcrumbs and shake until chicken covered.
  • Place in the oven at 200C/400F and cook for 20-35 minutes. Check the chicken has cooked through by breaking a nugget open. Allow to cool and then serve!
