½ cup white sugar
2 eggs
⅓ cup applesauce
1 teaspoon vanilla extract
⅓ cup unsweetened cocoa powder
⅓ cup white whole wheat flour
¼ teaspoon salt
¼ teaspoon baking powder
3 tablespoons butter, softened
3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
½ cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
  • Melt 1/4 cup butter in a large saucepan over low heat. Remove from heat and stir in white sugar, eggs, applesauce, and 1 teaspoon vanilla extract. Beat in 1/3 cup cocoa powder, flour, salt, and baking powder. Spread into prepared pan.
  • Bake in preheated oven until brownies are just set in the center, 20 to 25 minutes.
  • Combine 3 tablespoons butter, 2 tablespoons cocoa powder, honey, 1 teaspoon vanilla extract, and confectioner's sugar in a bowl; beat until smooth. Frost brownies while they are still warm.

1/2 cup oil substitute (sunsweet light bake)
5 ounces unsweetened chocolate
1 cup cocoa powder
3/4 cup Egg Beaters egg substitute
1 tablespoon instant espresso
1 tablespoon vanilla extract
3/4 cup Splenda Sugar Blend for Baking
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Preheat oveb to 350 degrees F. Grease an 8x8x2 inch pan.
  • Melt dark unsweetend chocolate and mix with oil, oil substitute, splenda sugar blend, vanilla, instant espresso, and egg substitute. Stir misture well.
  • Stir together flour, baking powder, cocoa powder, and salt.
  • Mix together wet and dry ingredients until mixed but do not overmix.
  • Pour into prepared pan.
  • Bake for 25-30 minutes, or until tester comes out clean. Do not overbake! Cool, thouroughly and then cut into squares.

Delicious, low fat, vegetable added, whole wheat, dark chocolate, moist, fudgy brownies...what's not to like? Optional additions: 1-2 T bourbon, rum or whiskey adds a nice complex flavor, 1 C chopped nuts of your choice (walnuts, pecans, almonds), marshmallows &/or fresh raspberries as a topping. I usually add 2-4 T ground flax and chia seeds for health & increased protein--makes them into a breakfast bar in my opinion!

3/4 cup whole wheat flour or 3/4 cup white flour
3/4 cup oats, ground to powder
2 apples or 2 zucchini, shredded
2 eggs
1 cup unsweetened cocoa powder (I use up to 1 1/4 C if want dark dark chocolate tasting brownies)
1 1/4 cups sugar (I use brown, turbinado, or a mix of sugar & honey. can use less)
1/2 cup water, boiling
1/2 cup nonfat milk or 1/2 cup applesauce
1/3 cup plain fat-free yogurt (I used Greek since I had it on hand)
2 tablespoons ground flax seeds (optional)
2 tablespoons chia seeds (optional)
1/2 teaspoon baking soda
1 teaspoon salt
1/2 tablespoon vanilla
8 ounces semi-sweet chocolate chips

Steps:

  • Preheat oven to 350F (180C) and grease a 9x13 inch pan. Sprinkle turbinado sugar on the pan to make a delicious crunchy crust.
  • In a large bowl, stir together the cocoa powder, baking soda, & salt. Blend in milk & yogurt and mix until smooth.
  • Pour in boiling water, stirring until mixture thickens.
  • Stir in eggs, sugar, and vanilla, stirring until smooth.
  • Add flour, chia and flax seeds, stirring until smooth.
  • Add chocolate chips, stir to combine and pour batter into baking pan. Add liquor if using.
  • Bake at 350F for 20 minutes if you want fudgy brownies. Cook for additional 5-10 minutes for drier brownies. If adding marshmallows or raspberries as a topping add now and put under broiler for 1-2 minutes. I love adding a sprinkle of turbinado sugar to the top of the brownies to add a nice crunch.

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a small microwave-safe bowl, microwave the chocolate in 15 to 30-second intervals, stirring occasionally, until completely melted. Set aside.
  • While the chocolate cools a bit, beat the eggs thoroughly with a whisk until foamy and pale.
  • Pour in the honey and melted chocolate and whisk until fully combined.
  • Sprinkle in the whole wheat flour and salt. Fold the batter together with a spatula just until the flour disappears.
  • Pour the batter into a greased 8x8-inch (20x20 cm) baking tin and spread the top into an even layer.
  • Bake for 15 minutes, until the batter has just begun to set.
  • Let the brownies cool at least another 30 minutes before slicing and serving.
