CHICKEN IN LEMONGRASS SAUCE

12 ounces green Chinese long beans or green beans, trimmed, cut into 1 1/2-inch pieces
2 tablespoons peanut oil
1 1/2 pounds skinless boneless chicken breast halves, cut crosswise into 1/2-inch-wide strips
1 medium onion, sliced
4 garlic cloves, minced
1/3 cup minced lemongrass*
3 tablespoons Thai fish sauce (nam pla)*
3 tablespoons sugar
2 teaspoons ground coriander
1 teaspoon turmeric
1/2 cup chicken stock or canned low-salt chicken broth
2 tablespoons spicy oyster sauce*

Steps:

  • Cook beans in large saucepan of boiling salted water just until crisp-tender, about 2 minutes. Drain.
  • Heat oil in heavy large skillet over high heat. Add chicken, onion and garlic; stir-fry until chicken is partially cooked, about 4 minutes. Add lemongrass and next 4 ingredients; stir 2 minutes. Add beans, stock and oyster sauce; reduce heat and simmer until sauce thickens and chicken is cooked through, about 4 minutes longer. Season with salt and pepper.

I use this sauce in a Singaporean-inspired "Grilled Beef in Grape Leaf" from chef/owner Chris Yeo of Straits Restarurant. I orginally acquired this recipe from Wine Enthusiast Magazine.

15 cilantro leaves
2 ounces garlic
4 ounces red fresno bell peppers, seeded

1 cup granulated sugar

Steps:

  • Combine all of the lemongrass sauce ingredients into a blender. Puree the ingredients until the garlic and lemongrass are finely chopped.

1/2 cup rice vinegar
2 tablespoons sugar
1/4 cup water
1/4 cup Asian fish sauce (nam pla)
1/4 cup fresh lime juice
2 tablespoons finely minced lemongrass bulb
1 makrut lime leaf, shredded fine (optional; sold in Asian markets)
2 teaspoons minced fresh coriander leaves
1 teaspoon minced scallion
2 tiny Thai red "bird" chilies, or other fresh red chilies, sliced (or to taste)

Steps:

  • Combine the vinegar, sugar, water, fish sauce and lime juice in a small, nonreactive saucepan. Bring just to a boil; then, add the lemongrass and the lime leaf and simmer for 30 seconds.
  • Remove from heat, and place the saucepan in a bowl of ice and water to chill it until it is room temperature, about 10 minutes.
  • Stir in the cilantro, scallions and chilies to taste.

This vibrant lemongrass ginger sauce recipe uses ginger, lemongrass and just a touch of celery leaves to add freshness to seafood or chicken.

3 tablespoons olive oil
3 shallots (finely chopped)
1 inch lemongrass (finely chopped)
3 garlic cloves (chopped)
1 cup white wine
2 inches of fresh ginger (grated or finely chopped)
Juice of 1/2 lemon
2 tablespoons celery leaves (finely chopped)
Salt (to taste)

Steps:

  • In a large pan, heat the olive oil over medium-high heat until hot, about 2 to 3 minutes. Add the shallots and lemongrass and cook for 2 minutes, stirring often. Add the garlic and cook for another minute, stirring well.
  • Add the wine, the grated or finely chopped ginger and a little salt, then turn the heat up to high. Boil off the wine by half, about 5 minutes. Turn off the heat, add the lemon juice, one tablespoon of celery leaves, and taste for salt-add some if you need it.
  • Pour the sauce into a food processor and blitz it until it becomes a thick puree; it should look a bit like a light green mayo, as everything will emulsify.

4 stalks lemongrass, tough outer leaves removed, cut into pieces
1 inch piece ginger, peeled, roughly chopped
4 cloves garlic
2 shallots, peeled and roughly chopped
2 tablespoons brown sugar
1/2 cup mirin (Japanese cooking wine)
2 tablespoons fish sauce
6 tablespoons canola oil

Steps:

  • Add lemongrass, ginger, garlic, and shallots through feed tube of a food processor with motor running. Process until very finely chopped. Add sugar, mirin, and fish sauce; process until pureed, scraping sides as needed. With motor running, slowly add oil; process until incorporated.

1 teaspoon olive oil
2 tablespoons finely chopped leeks, white part only
1 large shallot, finely chopped
1 clove garlic, minced
4 mushrooms, finely chopped
1 large stalk lemongrass, trimmed and soft bulb finely sliced
1 makrut lime leaf
1/4 cup dry white wine
6 tablespoons fish stock
1 cup heavy cream
1/2 pound unsalted butter
Few sprinkles of cayenne

Steps:

  • Heat oil in nonstick pan. Over low heat, saute leek, shallots, garlic, mushrooms, lemon grass and lime leaf. Cook for a few minutes, stopping before ingredients begin to take on color. Add wine, bring to a boil and reduce by two-thirds. Add fish stock and reduce by two-thirds.
  • Add cream, and simmer for 10 minutes; strain sauce. Clean pot or use fresh one. Return strained sauce to pot, and return to heat. Add a tablespoon of butter at a time to lightly boiling sauce, whisking until butter is incorporated. Season with cayenne, and serve over won tons.
