1/2 tsp baking soda
1/4 tsp salt
4 tbsp coconut sugar or brown sugar
4 tbsp regular sugar, (unrefined if desired)
1/3 cup chocolate chips, (or more if desired)
optional 1/3 cup chopped nuts
1 tsp pure vanilla extract
2 tbsp vegetable or melted coconut oil
3-5 tbsp milk of choice, (as needed)

Steps:

  • Healthy Chocolate Chip Cookies Recipe: Preheat oven to 380 degrees. Combine dry ingredients and mix very well. Add wet, and form into a big ball. Now make little balls from the big one. For soft cookies, refrigerate until cold (otherwise, just bake right away). Bake 9 minutes. Remove from oven when they're still a little undercooked, then it's important to let cool 10 minutes before removing from the tray, as they'll continue to cook while cooling. They should have spread out, but every now and then they might not (climate plays a huge role in baking), so just smush down with a spoon if needed. You can also choose to make extra cookie dough balls and freeze them to bake at a later date. For softer cookies, store in a lidded plastic container. ½ cup salted natural peanut butter
¼ cup raw honey
1 teaspoon vanilla extract
¾ cup oat flour
½ teaspoon baking soda
¾ cup chocolate chips
¾ cup rolled oats, optional

Steps:

  • Preheat the oven to 350°F. Coat 1 baking sheet with cooking spray, or line with parchment paper.
  • Add peanut butter, honey and vanilla extract to a medium bowl and mix well.
  • Whisk together oat flour and baking soda in a separate bowl. Stir oat flour mixture into peanut butter mixture. Fold in oats (if using) and chocolate chips.
  • Shape cookie dough into 1 tbsp balls, and place 2 inches apart on prepared baking sheets. Flatten cookies with the bottom of a drinking glass, dipped in water.
  • Bake for 8 to 10 minutes, or until cookies begin to brown and tops look dry. Cool for 3 minutes on a baking sheet, then transfer to a wire rack.
  • Serve warm and enjoy.

120g butter, softened
75g light brown sugar
75g golden caster sugar
1 medium egg
1 tsp vanilla extract
180g plain flour
½ tsp bicarbonate of soda
150g dark chocolate, cut into chunks

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line two baking sheets with parchment. Cream the butter and sugars together until very light and fluffy, then beat in the egg and vanilla. Once combined, stir in the flour, bicarb, chocolate and ¼ tsp salt.
  • Scoop 10 large tbsps of the mixture onto the trays, leaving enough space between each to allow for spreading. Bake for 10-12 mins or until firm at the edges but still soft in the middle - they will harden a little as they cool. Leave to cool on the tray for a few mins before eating warm, or transfer to a wire rack to cool completely. Will keep for three days in an airtight container.
