HEART HEALTHY CINNAMON RICE PUDDING

I can say this is heart healthy because I found this recipe in the American Heart Associations Healthy Recipes booklet. I love the taste of this pudding! The first time I tried to make rice pudding when I was a teen it came out looking like a form of cement - needless to say I've improved and this recipe is now a favorite.

2 1/2 cups nonfat milk
1/2 cup arborio rice, uncooked
1 cup nonfat milk
1 cinnamon stick, about 3 inches long
3 tablespoons sugar
1 teaspoon lemon zest, grated
1/2 teaspoon vanilla
ground cinnamon

Steps:

  • In a large, heavy bottomed saucepan, stir together the 2 1/2 cups milk and the rice. Bring to a boil over high heat, stirring occasionally.
  • Reduce heat to medium high and boil for 5-6 minutes or until the mixture begins to thicken, stirring occasionally.
  • Stir in the other 1 cup of milk, the cinnamon stick, sugar and lemon zest.
  • Increase the heat to high and return to a boil, stirring occasionally.
  • Reduce the heat to medium high and boil for 4-5 minutes or until creamy and soupy.
  • Remove from the heat.
  • Stir in the vanilla and let the mixture stand for 30 minutes to thicken somewhat.
  • Before serving, remove the cinnamon stick. Sprinkle the individual dishes of pudding with ground cinnamon to your tastes.

I'm a heart patient and diabetic. I really have to watch my diet. I love rice pudding, so I put together this recipe that doesn't use sugar, eggs, butter or regular salt. I substitute for all these bad things and it seems to work. My wife likes it served to her hot. I like it cold right out of the fridge. If you like rice pudding, try it. I think you will like it.

2 1/4 cups white rice (uncooked)
6 cups reduced-fat milk, divided
3/4 cup Splenda granular, No Calorie Sweetener
3/4 teaspoon salt substitute
2/3 cup Egg Beaters egg substitute
1 1/2 cups raisins
6 tablespoons Smart Balance light butter spread
1 1/2 teaspoons vanilla extract
1 teaspoon ground cinnamon

Steps:

  • In a medium pan, bring 5 1/2 cups water to a boil.
  • Add rice and stir.
  • Reduce heat, cover and simmer for 20 minutes.
  • In another saucepan, combine the cooked rice, with 4 1/2 cups milk, sugar and salt.
  • Cook over medium heat until thick and creamy, 15 to 20 minutes.
  • Stir in remaining 1 1/2 cups milk, Eggbeaters, ground cinnamon and raisins.
  • Cook 2 minutes more, stirring constantly.
  • Remove from heat and stir in butter and vanilla.
  • Serve warm or cold.

¾ cup uncooked brown rice
1 ½ cups low-fat milk
⅓ cup white sugar
¼ teaspoon salt
½ cup low-fat milk
1 egg, beaten
⅔ cup raisins

½ teaspoon vanilla extract

Steps:

  • Combine water and rice over high heat in a saucepan and bring to a boil. Reduce heat to medium-low, cover, and simmer until tender, about 45 minutes.
  • Combine cooked rice, 1 1/2 cups milk, sugar, and salt in a clean saucepan. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg, and raisins. Cook 2 minutes more, stirring constantly. Remove from heat and stir in butter and vanilla extract. Serve warm.

1-1/3 cups fat-free milk
1/2 cup uncooked long grain rice

1l semi-skimmed milk + 100ml
200g wholegrain rice
1 orange , finely zested
1 tsp mixed spice
1 tsp cinnamon
A grating of nutmeg
1 tbsp orange segments
honey and raisins, to serve

Steps:

  • Butter the slow cooker all over the base and half way up the sides. Heat the milk to a simmer. Mix the pudding rice and the milk and pour into the slow cooker. Add the orange zest, and spices. Cook for 4 hours on low and stir once or twice if you can. If after 3 hours the rice pudding is beginning to stick to the base of the cook, add a splash of water. The rice will be tender when cooked. Add 100ml milk to loosen the pudding, if necessary.
  • Serve topped with orange segments and honey, fruit and raisins, if you like.

Once rice has reached a boil, turn heat to medium low and let water reduce for 10 minutes, or sooner if the liquid has already evaporated. Take care not to let the water evaporate out completely. If there is any excess water at the end of 10 minutes, drain it out.
  • Add coconut milk, cinnamon sticks and salt and bring up to a gentle simmer on medium to medium-low heat. Simmer, uncovered, for 25 minutes and stir the pan every few minutes to make sure the rice does not stick.
  • Add raisins and sugar, and turn the heat to low. Cook for an additional 15 minutes, uncovered, stirring frequently, until the rice has absorbed most of the liquid and it has thickened up.
