1/2 green bell pepper, chopped
1/2 onion, chopped
1 can (15 oz) red kidney beans, rinsed and drained
1 can (14 oz) beef broth
1 tbsp Cajun seasoning
2 cups Minute® White Rice
hot pepper sauce (optional)

Steps:

  • In just 4 simple steps you can enjoy this Red Beans and Rice dish made with sautéed green pepper and onion, red kidney beans, white rice and Cajun seasoning simmered in beef broth. Step 1
  • Melt butter in a large skillet over medium heat. Add bell peppers and onions; cook and stir until crisp-tender. Step 2
  • Add beans, broth and seasoning; stir. Bring to a boil. Step 3
  • Stir in rice and cover. Remove from heat. Let stand for 5 minutes. Fluff with a fork. Serve with pepper sauce, if using. Recipe Tip To turn this dish into a quick, complete meal, add 2 cups of diced ham or cooked sausage at the same time as the broth.

1 pound dried kidney beans
2 teaspoons garlic salt
1 teaspoon Worcestershire sauce
1/4 teaspoon hot pepper sauce
1 quart water
1/2 pound fully cooked ham, diced
1/2 pound fully cooked smoked sausage, diced
1 cup chopped onion
1/2 cup chopped celery
3 garlic cloves, minced
1 can (8 ounces) tomato sauce
2 bay leaves
1/4 cup minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon pepper
Hot cooked rice

Steps:

  • Place beans in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 to 4 hours or until softened. , Drain beans, discarding liquid. Add the garlic salt, Worcestershire sauce, hot pepper sauce and water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours. , Meanwhile, in a large skillet, saute ham and sausage until lightly browned. Remove with a slotted spoon to bean mixture. Saute onion and celery in drippings until tender. Add minced garlic cloves; cook 1 minute longer. Add to bean mixture. Stir in tomato sauce and bay leaves. Cover and simmer for 30 minutes or until beans are tender. , Discard bay leaves. Measure 2 cups beans; mash and return to the bean mixture. Stir in the parsley, salt and pepper. Serve over rice.

1 pound bulk Italian sausage
1 medium green pepper, chopped
1 small onion, chopped
1 garlic clove, minced
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 cup salsa
1 teaspoon Italian seasoning
Hot cooked rice

Steps:

  • In a Dutch oven, cook sausage, green pepper, onion and garlic over medium heat until meat is no longer pink; drain. Add beans, soup, salsa and Italian seasoning; heat through. Serve with rice. This is my version of red beans and rice. After searching through several and combining parts of many, this is what I came up with. It is probably not a traditional version. (I'm from Oklahoma, not Louisiana :) ), However, ever time I have taken this someplace, the dish comes back empty and several people ask for the recipe. I will often make early and then put it in a crockpot on low. It becomes very creamy when made this way. I usually sautee the veggies in a sprayed, non-stick skillet, but you can use 2-4 tablespoons of butter instead. This recipe doubles nicely.

1 green pepper, chopped
2 stalks celery, chopped
2 garlic cloves, minced
1 teaspoon liquid smoke
1 teaspoon all purpose Greek seasoning
salt and pepper
2 (16 ounce) cans red beans
1 1/2 cups rice, uncooked
1 -2 lb smoked sausage, sliced

Steps:

  • Cook the rice according to the package instructions, being sure to add plenty of salt. Set aside.
  • In a large skillet, sautee the onion, green pepper, celery, garlic and seasonings until the veggies are soft.
  • Stir in the beans and sliced sausage.
  • Heat thoroughly then mix in the rice.
  • Heat throughout and serve.
