When I was a girl, it was a rare occasion when Mom made a gourmet meal. Most often, she relied on traditional recipes like this one. My sister and I ate more than our share of these versatile golden rolls. -Brenda DuFresne, Midland, Michigan

Yield 2 dozen.

Number Of Ingredients 8

1 package (1/4 ounce) active dry yeast
1-1/4 cups warm milk (110° to 115°)
1/4 cup butter, softened
1 large egg, room temperature
3 tablespoons sugar
1 teaspoon salt
4 to 4-1/2 cups all-purpose flour
Additional butter, melted

Steps:

  • In a large bowl, dissolve yeast in warm milk. Add the butter, egg, sugar, salt and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down and divide in half. Divide each half into 36 pieces and shape into balls. Place 3 balls in each greased muffin cup. Cover and let rise until doubled, about 30 minutes. Brush with additional butter. , Bake at 375° for 15-18 minutes or until lightly browned. Remove to wire racks. Serve warm.

Packed with savory herbs and spices, these fluffy Herb Cloverleaf Rolls make a flavorful side for any hearty meal. They pair so well with Italian dishes and make a great addition to any Thanksgiving spread.

Number Of Ingredients 14

1 package (2 & 1/4 teaspoons) dry yeast
2 teaspoons granulated sugar
1/4 cup warm water (105-115°F)
3/4 cup milk (whole, 2%, or 1% milk will work)
1/2 cup evaporated milk (regular or skim)
4 cups (480g) bread flour or all-purpose flour, divided
1 & 1/2 tablespoons unsalted butter, melted
1 teaspoon salt
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/4 teaspoon ground black pepper
1 tablespoon water
1 large egg white, lightly beaten

Steps:

  • Dissolve the yeast and sugar in the warm water. Let stand for 5 minutes, then stir in the milk and evaporated milk.
  • Add 3 cups of the flour, melted butter, salt, rosemary, thyme, oregano, and pepper, and stir until blended.
  • Place the dough on a lightly floured surface. Knead until smooth and elastic. (This should take about 10 minutes.) Add more flour, about a tablespoon at a time, until the dough doesn't stick to your hands.
  • Place the dough in a large bowl coated with cooking spray, and turn the dough so it's coated with the cooking spray. Cover and let rise in a warm place (about 85°F) for 1 hour or until doubled in size.
  • Punch down the dough, cover, and let rest for 10 minutes.
  • Coat 18 cups of standard muffin pans with cooking spray.
  • Divide the dough into 18 equal portions.*
  • Using one portion of the dough at a time, divide each portion into 3 pieces and shape each piece into a ball. (Cover the remaining dough to keep it from drying out.) Place the 3 dough balls into each muffin cup. Repeat with the remaining dough.
  • Cover the pans and let the dough rise in a warm place for 30 minutes or until doubled in size.
  • Preheat oven to 350°F.
  • Combine the water and egg white. Brush over the tops of the dough.
  • Bake for 20 minutes, or until browned.

1 cup water (70° to 80°)
2 tablespoons butter, softened
1 large egg
1/4 cup sugar
1 teaspoon salt
1/2 teaspoon each dried basil, oregano, thyme and rosemary, crushed
3-1/4 cups bread flour
2-1/4 teaspoons active dry yeast
Additional butter, melted
Coarse salt, optional

Steps:

  • In a bread machine pan, place the water, butter, egg, sugar, salt, seasonings, flour and yeast in order suggested by manufacturer. Select dough setting(check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., When cycle is complete, turn dough onto a lightly floured surface. Divide dough into 16 portions; shape each into a ball. Place 2 in. apart on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes., Bake at 375° for 12-15 minutes or until golden brown. Brush with butter and sprinkle with coarse salt if desired. Remove from pans to wire racks.

HERBY BUTTER DINNER ROLLS

4 sticks (1 pound) salted butter
24 frozen unbaked dinner rolls
1 1/2 teaspoons chopped fresh rosemary
1 1/2 teaspoons dried thyme
1 lemon, zested

Steps:

  • Melt 1/2 stick (4 tablespoons) of the butter and brush two 12-cup muffin tins with it. Put the frozen rolls in the cups of the muffin tins. Cover and allow to rise for several hours at room temperature or in the fridge overnight.
  • Melt the remaining 3 1/2 sticks butter in a skillet over medium-low heat. Mix in the rosemary, thyme and lemon zest and heat until warmed through. Lightly brush the risen rolls with the butter mixture.
  • Bake the rolls according to the package directions (usually 400 degrees F for 6 to 8 minutes), until the rolls are a deep golden brown on top. Dab with more of the butter mixture and serve warm.

1 (16 ounce) package hot roll mix
2 1/4 teaspoons dried dill
1 1/4 teaspoons caraway seeds
1 cup warm water
2 tablespoons butter, at room temperature
1/2 cup butter, at room temperature
2 eggs
1 teaspoon grated lemon zest

Steps:

  • Combine mix with yeast packet from mix, 1 t. dill and 1 t. caraway. Stir in water, 2 T. butter and 1 egg. On floured surface knead dough until smooth. Let stand 5 minutes.
  • Coat 8 muffin pan cups with cooking spray. Cut dough into 8 pieces; cut each piece into thirds. Shape each third into ball. Place three balls in each muffin cup. Cover with kitchen towel. Let rise in warm place 25 minutes.
  • Meanwhile, in small bowl combine remaining butter, 1 t. dill and lemon zest; refrigerate until ready to serve.
  • Preheat oven to 375 degrees. Lightly beat remaining egg with 1 t. water; brush over rolls. Sprinkle with remaining dill and caraway. Bake 15 minutes or until tops are golden. Serve with herbed butter.

  • In a medium saucepan, heat the milk with 3 tablespoons of the butter and the sugar just until the butter melts. Transfer to a large bowl and let cool slightly. Stir in the yeast and let stand until dissolved, about 5 minutes. Add the 4 cups of flour and the salt and stir until a soft sticky dough forms.
  • Turn the dough out onto a lightly floured surface and knead until silky, about 4 minutes. Transfer the dough to a lightly oiled bowl, cover with plastic wrap and let rise in a warm spot until doubled in bulk, about 1 hour.
  • In a small shallow bowl, mix the cheese with the parsley, thyme and rosemary. Melt the remaining 8 tablespoons of butter in a small saucepan.
  • Lightly butter 18 of the cups in 2 or more nonstick muffin pans. Punch down the dough and divide it into 3 equal pieces. Working with 1 piece of dough at a time and keeping the rest covered, roll the piece of dough into a 1-inch-thick rope, then cut the rope into 18 equal pieces; roll each piece into a ball. Dip half of each ball into the melted butter and then into the herb-cheese mixture and arrange 3 balls in each prepared muffin cup, coated sides touching in the center. Repeat with the remaining dough and topping. Brush the top of the rolls with the remaining melted butter. Cover the muffin pans with plastic wrap and refrigerate overnight.
