CHERRY COBBLER I
This is a very good recipe from a neighbor, and it is requested often. Fresh or frozen cherries may be used in this recipe.

Steps:
- Mix 3/4 cup sugar, butter or margarine, flour, salt, baking powder, and milk together. Place cherries in the bottom of a 9 inch square pan. Spread dough over cherries.
- In a small bowl, combine 1 cup sugar and cornstarch. Stir in boiling water. Pour mixture over the dough.
- Bake at 350 degrees F (175 degrees C) for 45 minutes. Serve warm.

FRESH CHERRY COBBLER
This is one of my absolute favorites. You can have the cherries macerating all afternoon, and whip up the finished product while you do the dinner dishes for a special evening dessert. My Belgian husband had never eaten a cobbler before this one, now he can't get enough . . .

Steps:
- Combine in a large saucepan the cherries, 3/4 cup sugar, tapioca and water.
- Let stand at least one hour and up to several hours, stirring occasionally.
- Cook and stir till slightly thickened and bubbly, about 5 to 10 minutes at a good boil.
- Add 1 TBS butter and set aside.
- Pre-heat oven to 350 degrees.
- Put the 1/2 cup butter in a 9 X 13-inch glass baking dish and put the dish in the preheating oven.
- While the butter is melting, mix the batter by combining flour, baking powder, salt, sugar and milk.
- When the butter is completely melted, remove the pan and pour the batter into the melted butter.
- The batter will immediately begin to cook, which is what you want.
- Carefully spoon the cherry mixture evenly over the batter.
- Return dish to oven and bake for approximately 20 minutes, or until batter sets and is browned.
- As the cobbler cooks, the batter will begin to rise up around the cherry mixture.
- Serve warm (or at room temperature) with vanilla ice cream, if desired.

FRESH CHERRY COBBLER
This is a delicious cherry cobbler made with fresh cherries instead of canned. It may take a little longer to make because you need to pit the cherries, but it is well worth it when you taste the finished product.

- Preheat the oven to 350 degrees F (175 degrees C). Place the butter in a 9x13 inch baking dish, and place in the oven to melt while the oven is preheating. Remove as soon as butter has melted, about 5 minutes.
- In a medium bowl, stir together 1 cup of flour, 1 cup of sugar, and baking powder. Mix in the milk until well blended, then pour the batter into the pan over the butter. Do not stir.
- Rinse out the bowl from the batter, and dry. Place cherries into the bowl, and toss with the remaining 3/4 cup of sugar and 1 tablespoon of flour. Distribute the cherry mixture evenly over the batter. Do not stir.
- Bake for 50 to 60 minutes in the preheated oven, until golden brown. A toothpick inserted into the cobber should come out clean.

- Preheat oven to 375°.
- Cut dough into 8 (9 x 1-inch) strips. Arrange dough strips in a lattice design on a baking sheet coated with cooking spray. Brush dough with egg white, and sprinkle evenly with 1 tablespoon sugar.
- Bake at 375° for 15 minutes or until crust is golden brown. Cool on pan, on a wire rack, 10 minutes. Carefully lift crust using 2 spatulas; cool completely on a wire rack.
- Combine cherries, 1 cup sugar, tapioca, juice, and salt. Let stand 15 minutes.
- Spoon the cherry mixture into an 8-inch baking dish coated with cooking spray. Top with butter.
- Bake at 375° for 40 minutes or until hot and bubbly. Place crust on top of cherry mixture.

HERE'S THE "FRESH CHERRY COBBLER"
Had a request for the Fresh Cherry Cobbler too. This is ofcourse like my peach cobbler...yum yum It's hard to deside just which I like best (I lean a bit to the Cherry side). I used to make these kinds of cobblers all the time in huge quanities when I cooked at the Senior Citizen Center and for Meals on Wheels...made them both ways. Made some with sugar and some with splenda as we had a lot of diabetics and they loved cobbler too. They would get so tired of having Vanilla Wafers, Fruit Cups...etc. So I tried my best to revamp a lot of desserts for them to be able to eat too. THEN, would you believe, I was diagnosed with diabetes myself. I was soooo bumbed out, because my Hubby is the "Sweetaholic" not me!!! I always watched what I ate and thought I was eating healthy. I didn't even have anyone in my family (that I kenw of) that had ever had diabetes. Doctor said, "sometimes it just happens"

- Preheat oven to 350F.
- Melt butter in 9×13 casserole dish in oven (or microwave), until completely melted (about 5 min in oven).
- Combine 1 cup flour, 1 cup sugar & baking powder in small bowl, mix well.
- Add milk and stir until combined, then pour flour-milk mixture over melted butter in casserole dish.
- Mix cherries, 3/4 sugar (splenda), and 1 T flour in bowl together.
- Pour cherry mixture over flour/milk mixture in the casserole dish evenly, (do not stir, just swirl a knife lightly through it).
- Bake 40-50 minutes, until golden brown.
- Serve warm, room temp or chilled ....it's good either way. Good also served with ice cream or whipped cream.
- P.S. crust will rise to the top while baking.
