FRESH ALBERTA BISCUITS
Pioneer biscuits, the same ones Grammy used to make. You can use either lard or shortening.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Whisk together flour, dry milk powder, sugar, baking powder, cream of tartar, and salt in a large bowl. Cut shortening into flour mixture with a knife or pastry blender until mixture resembles coarse crumbs. Stir water into mixture until uniformly moistened and a soft dough forms.
- Turn dough out onto a lightly floured surface and, with floured hands, knead until smooth, about 8 to 10 turns. Roll dough out to 3/4-inch thickness with a floured rolling pin. Cut biscuits with a 2 1/2-inch round cookie cutter; place onto a baking sheet. Press dough trimmings together, roll out again, and cut remaining dough into rounds.
- Bake biscuits in the preheated oven until golden, about 20 minutes. Serve warm.

ABERNETHY BISCUITS
These "cookies" (as Americans would call them) are named after a Dr. Abernethy who suggested the addition of caraway seeds and sugar to plain biscuits.

Steps:
- Sift the flour and baking powder and rub in the butter until it is thoroughly mixed.
- Mix in the sugar and caraway seeds and then add the egg and milk to make a stiff dough.
- Roll the mixture on a floured surface until it is the thickness required for a biscuit/cookie.
- Cut out with a three-inch cookie cutter, rolling the trimmings to make more, as required.
- Prick the top of the biscuits with a fork and place on greased baking trays and bake in a pre-heated oven at 375F for 10 minutes until golden brown.
- After they have cooled, store in an airtight tin (unless you can't resist eating them all immediately!).

- Preheat oven to 375 degrees F (190 degrees C). Grease baking sheets or line them with parchment paper.
- In a large bowl, combine the flour, sugar, and baking powder. Cut in the shortening until the mixture resembles coarse crumbs.
- In another bowl, beat the eggs, milk, seeds and lemon zest until blended well. Add to the dry ingredients and blend until smooth. If the dough seems a bit stiff, add extra milk, one tablespoon at a time.
- On a floured surface, roll dough out 1/4 inch thick and cut using a 2-inch round cutter. lace cookies 2 inches apart on prepared baking sheet.
- Bake in preheated oven until edges are lightly browned, 7 to 10 minutes. Cool on wire rack.
