I have several recipes for waffles but I always come back to this one. I only use NATRON in my waffles but I have substituted NATRON with baking soda in this recipe. I think both NATRON and SOURED MILK is hard to find in the US. Norwegians always use a 5-heart iron to make waffles but it's no requirement. Serve them warm with any topping your heart desires.

Number Of Ingredients 7

2 eggs
1/4-1/3 cup sugar
1 teaspoon vanilla
1/4 cup melted butter
1 teaspoon baking soda
2 cups soured milk
2 cups flour

Steps:

  • Stir baking soda into 1 cup soured milk.
  • Melt and cool the butter.
  • Whisk together eggs, sugar and vanilla.
  • Whisk in melted, cooled butter.
  • Add in flour and baking soda/soured milk. Stir.
  • Add the rest of the soured milk. You might need to add a bit extra but the batter should be pretty thick.
  • You should make the waffles right away but you can keep the batter in the fridge until the next day.

This is my great-grandmother's waffle recipe. I think there are several floating around the family, but this is the one that my parents had. It makes a lot of waffles, so unless I'm cooking them for some sort of event of get together I often cut the recipe in half or save some of the batter in the refrigerator to make some fresh ones in the next day or two. We never eat Norwegian waffles like regular waffles. Sometimes we eat them in the morning, but usually they are made as a dessert or for when people come over for coffee, for a snack, etc. Also, we never eat them with syrup. They are always eaten with some combination of butter, sugar and jam (raspberry, lingonberry). Usually I just eat them plain. At my husband's request, I use 1 tsp. cardamom as well as 1 tsp. vanilla, but you could use only the cardamom or only the vanilla if you have no cardamom. I never make them without cardamom- I think that's the best part! *the servings number listed is a guess- I've never counted! I'll have to update it. The cooking time is also a guess because it depends on your waffle maker. I guessed 30 minutes if you made all of the waffles. Enjoy!

Steps:

  • Whisk eggs, sugar and butter (I use my Kitchen Aid).
  • Add vanilla, cardamom, baking powder, salt and milk and mix.
  • Thicken gradually with flour.
  • Cook in waffle iron until golden brown. The waffle iron that should be used is one that makes thin, heart shaped waffles, like the Villaware heart waffle maker. However, you could probably use anything that's not a Belgian waffle maker.

Heart-shaped waffles are a traditional treat throughout Scandinavia, made crisp in Sweden and soft-textured in Norway. Topped with jam or berries and whipped cream, or wafer-thin slices of gjeitost (Norwegian brown goat cheese), they're a favorite with coffee or as a snack. This recipe is my adaptation of Norwegian-style waffles served by my friends Megan and Sverre in Trondheim, Norway.

2 eggs, separated
¼ cup white sugar
1 teaspoon vanilla sugar
¼ cup water
3 tablespoons butter, melted
1 cup buttermilk
1 ½ cups all-purpose flour
¼ teaspoon ground cardamom
1 pinch salt

Steps:

  • Place egg yolks into a large mixing bowl with the sugar, and beat until light and frothy. Mix in the vanilla sugar and water until evenly combined, and stir in half the melted butter, half the buttermilk, half the flour. When mixture is smooth, mix in remaining butter, buttermilk, flour, cardamom, and salt, and beat again to a smooth batter.
  • In a separate bowl, beat the egg whites with an electric mixer until they form stiff peaks; gently fold the egg whites into the batter, incorporating as much volume as possible.
  • Preheat a waffle iron according to manufacturer's directions.
  • Spoon about 1/3 cup of batter into the preheated waffle iron, close the lid, and cook until the waffle is golden brown, about 5 minutes. Remove waffle to a plate. If using a heart-shaped iron, break the waffle into individual hearts to serve. Repeat with remaining batter.

Traditional Vafler, Norwegian Cardamom Waffles image

From "Cooking the Norwegian Way", the only changes I made was to use plain yogurt instead of sour cream, I left butter the way it was though I use Earth Balance. You can also try subbing half the flour for whole-wheat flour or just use whole-wheat pastry flour to get flakier waffles. Norwegian waffle irons also make heart-shaped waffles! My Powerpuff Girls waffle iron makes cool swirly-shape ones.

1 ¾ cups milk
1 teaspoon salt

  • Preheat a waffle iron.
  • Beat together eggs and sugar with an electric mixer until fluffy. Pour in shortening, milk, salt, and vanilla; mix until well blended. Sift together the flour and baking powder. Mix the flour into the liquid.
