Making and eating Hello Dollies have been a tradition in our family for a long time. Every Christmas we always have to make these.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Mix graham cracker crumbs and melted butter together in a bowl until evenly moistened; press into the bottom of a 9x13-inch baking dish.
- Pour 1/2 the can sweetened condensed milk over the graham cracker crust. Sprinkle semisweet chocolate chips, walnuts, coconut, and white chocolate chips over the graham cracker crust; gently press chocolate, nuts, and coconuts into the crust. Drizzle remaining 1/2 can of condensed milk over the top.
- Bake in the preheated oven until fragrant and coconut is golden, 25 to 30 minutes. Cool completely before cutting into squares.

- Preheat oven to 325 degrees Fahrenheit.
- Melt the butter in an 11 x 7 inch baking pan, making sure the sides of the pan are coated.
- Layer cracker crumbs, coconut, chocolate chips, chopped nuts and butterscotch chips in that order.
- Pour sweetened condensed milk over everything.
- Bake for 30 minutes or until light golden brown.
- Loosen from the pan; cool and cut into squares.

Steps:
- Preheat oven to 350 degrees. In a 13 by 9 inch baking pan mix together butter and graham cracker crumbs. Press into bottom of pan.
- Sprinkle coconut, chocolate chips, and walnuts in layers evenly over crust. Drizzle sweetened condensed milk over the top. Bake for 25 to 30 minutes. Let cool completely before cutting into squares.

HOLLY BARS
Steps:
- 1. Blend butter, powdered sugar and egg yolks until smooth. Mix in flour until completely blended. Press mixture into ungreased 13 x 9" pan. Bake in preheated 350 degree oven 15 minutes. 2. Blend sweetened condensed milk, vanilla, and lemon juice until thoroughly mixed. Mixture will begin to thicken. Stir in cherries. 3. Let crust cool 5 min, then spread cherry mixture evenly over top. 4. In a small mixing bowl, beat egg whites until frothy. Beat in 1/4 cup sugar, 1 tbsp at a time; continue beating until thick and glossy. Carefully spread meringue over cherry mixture to cover completely. Sprinkle almonds over top. Return to oven and bake 20 minutes. 5. Cool 30 minutes, then cut into 2 x 1" bars while still warm and remove from pan. Place bars on a platter, cover with plastic wrap, and refrigerate.

- Crust: Preheat oven to 375°F. Butter an 8-inch square cake pan. Line with parchment, leaving a 2-inch overhang on two sides; butter parchment.
- Beat butter with sugar on medium-high speed until pale and fluffy, about 3 minutes, scraping down bowl as needed. Reduce speed to medium-low, add flour and salt, and beat until dough forms clumps but does not completely hold together. Press 2 1/2 cups flour mixture into bottom and 1 inch up sides of prepared pan.
- Filling: In a medium bowl, stir together cherries, sugar, flour, lemon juice, and salt. Pour into crust. Crumble remaining flour mixture (about 1/2 cup) evenly over top, squeezing to create clumps.
- Bake until bubbling in center and crust is golden, about 1 hour, 10 minutes (if browning too quickly, tent top with foil). Transfer to a wire rack and let cool at least 20 minutes before slicing into squares.
HONEY BARS

- Combine flour, baking powder and salt and set aside. Beat eggs in a large bowl until thick and lemon colored. Beat in honey and almond extract.
- Gradually add in dry ingredients blending well. Stir in dates and almonds. Spread evenly in a 13 x 9 inch greased pan.
- Bake at 350 degrees F (175 degrees C) 12-15 minutes until lightly brown on top. Cool 2 minutes in pan. Cut into bars. When cool, sprinkle with confectioners' sugar.

HELLO DOLLIES
Bar cookies are always brilliant, but these Hello Dollies are extra brilliant because salty Ritz crackers add balance to an otherwise strictly sweet treat.

- Preheat the oven to 350°F (175°C). Line an 8 x 8-inch (20 x 20-cm)or 9 x 9-inch (23 x 23-cm) baking dish with parchment paper.
- In a large bowl, combine the crumbs from 35 smashed crackers and melted butter. Press the mixture into the bottom of the baking dish. Sprinkle the chocolate chips, peanut butter chips,nuts and coconut over the cracker layer. Drizzle the condensed milk over the top, trying to make it reasonably even. I use a spoon and slowly drizzle the milk, spoonful by slow spoonful. Sprinkle the remaining crushed crackers over the top of the milk.
- Bake for about 25 minutes, or until the coconut is golden brown and the edges are nicely toasted. Let the bars cool for at least an hour. Cut into small triangles by first cutting 9 squares, the cutting each square in half on the diagonal to get 18 triangles.Store the bars in the fridge.

- Blend Butter, sugar, and egg yolks. Mix in flour. Press in ungreased 9 x 13 pan and bake at 350 for 15 minutes. Blend condensed milk, vanilla, and lemon juice. Stir in cherries. Beat egg whites until frothy and beat in sugar 1T at a time. Continue to beat until stiff. Spread cherry mix on warm crust. Carefully spread meringue over this. Sprinkle almonds on top. Bake 350 for 20 minutes. Cut while warm. Refrigerate.
