CAJUN TURKEY AND GRAVY RECIPE BY TASTY
Here's what you need: frozen Cajun-style boneless turkey breast with gravy, kosher salt, freshly ground black pepper, olive oil, celery, large yellow onion, garlic cloves, water

Steps:
- Preheat the oven to 350°F (180°C).
- Pat the turkey breast dry with paper towels and season with salt and pepper.
- Heat the olive oil in a large, high-walled, oven-safe skillet over medium-high heat. Add the turkey breast, skin-side down, and sear until golden brown, 4-5 minutes. Flip the turkey breast, then scatter the celery, onion, and garlic around the pan.
- Transfer the pan to the oven and cook, basting with the pan juices every 30 minutes, until the internal temperature of the turkey breast reaches 165°F (75°C), about 75 minutes. Add water as needed if the bottom of the pan is starting to burn.
- Remove the turkey from the pan and let rest for 15 minutes before carving.
- Meanwhile, strain the turkey drippings through a fine-mesh strainer into a liquid measuring cup. Add water to reach 1 cup total liquid.
- Add the pan drippings and water to a small saucepan, along with the prepared gravy packet. Bring to a boil over high heat, then reduce the heat to medium-low and simmer, whisking constantly, until thickened, 5-7 minutes.
- Carve the turkey into ½-inch slices and serve with the gravy.

Steps:
- Place giblets and neck in a saucepan with enough water to cover by 2 inches; bring to a boil, reduce heat to low, and simmer until cooked through, 30 to 45 minutes. Transfer giblets and neck to a cutting board.
- Finely mince heart, liver, and gizzard meat; reserve 1/3 cup minced meat. Remove meat from neck and finely mince. Mash neck meat in a mortar with a pestle.
- Heat oil in large saucepan over medium-high heat. Saute green bell pepper in hot oil until fragrant and slightly softened, about 1 minute. Pour water and broth into saucepan. Immediately whisk cornstarch and flour into broth mixture until smooth.
- Stir minced meat, mashed neck meat, cubed turkey, milk, vinegar, sugar, salt, black pepper, cayenne pepper, garlic powder, onion powder, and dried parsley flakes into broth mixture; bring to a boil, reduce heat to low, and simmer, whisking occasionally, until gravy is thick, 30 to 35 minutes.

CAJUN TURKEY MEATLOAF
Next time you are making turkey meatloaf try kicking it up a notch! While this won't be featured on a Brennan's menu anytime soon it is delicious. The original recipe was from Bon Appetit but I've modified it over time. If you are leary of using only turkey, consider a mix of 1 part beef to 2 parts turkey.

Steps:
- If you don't have a pre-made Cajun spice blend, there are several good ones on this site. Try Cajun Seasoning Mix #14190 or Cajun Seasoning #33092. Look for one that has no added salt.
- Preheat oven to 350°F
- Optional Step: You can ground the oatmeal in the food processor one or two pulses. You are not looking for flour, just bits of oatmeal somewhat smaller than the whole grain.
- Combine all ingredients except mustard in large bowl. Season with salt and pepper.
- Place meat mixture in a nonstick loaf pan.
- Cover and bake 20 minutes. Scrape off any crud that may appear on the surface. Spread top with mustard.
- Bake uncovered another 35 minutes.
- Remove from pan and cut into slices.

CAJUN ROASTED TURKEY OR CHICKEN
The deli at our local market sells the most wonderful Cajun turkey meat. It has just enough spice for me. I have a high sensitivity to spicy/acidic food. It blisters my mouth, so I have to be careful. This recipe is the closest I've found to duplicate the recipe. You could always pare down the size of the bird you're cooking.

- Preheat oven to 350 degrees. In a small bowl, combine the seasoning, brown sugar, oil, oregano, and salt. Divide the mixture in half and add the garlic to one mix. Rub the garlic mixture under the skin. Rub the outside of the bird with the other mixture. Coat evenly.
- Place on a wire rack in your roasting pan.
- Roast until your thermometer inserted in the thigh registers 180 degrees and juices run clear, about 2 hours. Let stand 10 minutes before carving.
- NOTE: I think that 180 degrees is just a bit high. Compare with the cooking chart on the wrapper the bird comes in (most usually there's one on the back).

- Combine flour and 1 teaspoon Cajun seasoning in a shallow dish; dredge turkey cutlets in flour mixture, shaking off excess.
- Heat oil in a large skillet over medium-high heat. Cook turkey in hot oil until no longer pink in the center, 2 to 3 minutes on each side. Transfer turkey to a serving platter and keep warm.
