HOMEMADE CHEDDAR CRACKERS



Homemade Cheddar Crackers image

8 ounces sharp Cheddar, finely grated
1 cup all-purpose flour
4 tablespoons (1/2 stick) butter, cut into pieces
1/2 teaspoon kosher salt
1/2 teaspoon seasoned salt
Pinch of cayenne
3 tablespoons ice water

Steps:

  • Put the Cheddar, flour, butter, salt, seasoned salt and cayenne in a food processor and pulse until the mixture resembles sand. Add the ice water and pulse until the dough comes together. Form the dough into a ball, wrap in plastic and refrigerate for 1 hour.
  • Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat.
  • Roll out the dough to 1/4-inch thickness and cut into squares with a pizza cutter. Use a wooden skewer to poke a small hole in the center of each square. Transfer to the prepared baking sheet and bake until golden brown, 15 to 17 minutes. Allow to cool before packing up.

2 teaspoons active dry yeast
2/3 cup warm water
1 1/2 cups all-purpose flour, plus more as needed
1/2 teaspoon salt
1/2 teaspoon baking soda
Kosher salt
2 tablespoons butter, melted, plus more for greasing bowl

Steps:

  • Try Chuck's homemade soda crackers and you'll never go back to the store-bought ones.
  • In a small bowl, sprinkle the yeast over the warm water; stir to dissolve and let stand for 5 minutes.
  • In a large bowl, mix the flour, salt and baking soda. Add the yeast mixture and stir vigorously with a wooden spoon to blend. If the dough is sticky, add sprinkles of flour until a soft dough forms.
  • Knead the dough until it is soft and has an elastic consistency, about 5 minutes. Add sprinkles of flour to control the stickiness. If using a mixer or a food processor, the dough will form a soft ball around the revolving dough hook and clean the sides of the bowl. Add flour, if necessary, to firm up the dough.
  • Drop the dough into a buttered bowl, cover with plastic wrap and place in the refrigerator to rest for at least 1 hour and up to 18 hours (the longer the better.)
  • Arrange the rack in the middle of the oven and preheat to 425 degrees F. Line a baking sheet with parchment paper.
  • With a heavy rolling pin, roll the dough into a rectangle about 18 by 6 inches and no thicker than 1/8-inch. Fold the dough from the short ends, brushing off the excess flour, to make 3 layers for extra flaky crackers. Roll again using the rolling pin.
  • Prick the dough with the tines of a fork to help cook evenly. Evenly cut the dough along the edge of a ruler or yardstick with a pizza or cookie cutter into desired shapes.
  • Place the crackers close together on the prepared baking sheet. Sprinkle lightly with salt from 12-inches above the crackers to distribute evenly.
  • Bake until lightly browned and crisp, 15 to 20 minutes, depending on the thickness of the crackers. Check the crackers several times during the baking period to make certain those on the outer edge of the baking sheet are not getting too brown. If so, switch the ones on the outside with the ones in the middle.
  • Remove from the oven and brush the crackers with melted butter. Let cool on a metal rack.

Steps:

  • Mix flour, baking powder,& shortening and then add milk; blend well.
  • Form a ball with the dough and divide into 4 sections.
  • Roll 1 section out very thin (about 1/8 to 3/16-inches) -- making sure it is rolled out EVENLY -- and cut with a cookie cutter (you can use all shapes!) or a pastry wheel with the crinkled edges, and repeat with other sections.
  • place on an ungreased cookie sheet& prick the dough with a fork several times and sprinkle with salt.
  • Bake at 375 for 12-20 minutes until golden brown, but be careful not to burn!

2 tablespoons cold unsalted butter
1 cup Gold Medal™ self-rising flour
4 to 6 tablespoons buttermilk
1 teaspoon poppy seed
2 teaspoons sesame seed
1/4 teaspoon ground pepper
2 teaspoons finely chopped fresh rosemary leaves
1 tablespoon extra-virgin olive oil, for brushing
Coarse sea salt, for sprinkling
1/4 cup finely grated fresh Parmesan cheese
1 teaspoon dried oregano leaves

Steps:

  • Heat oven to 350°F. Line cookie sheet with cooking parchment paper or silicone baking mat.
  • Cut butter into small cubes. In medium bowl, coat butter in flour, then smash it between your fingers until well integrated and about the size of peppercorns.
  • Decide if you are making seeded, rosemary or Parmesan-oregano crackers. For seeded crackers, stir in poppy seed, sesame seed and pepper. For rosemary crackers, stir in rosemary. For Parmesan-oregano crackers, stir in Parmesan cheese and oregano.
  • Pour in 3 tablespoons of the buttermilk, and stir with fork. Add more buttermilk, a tablespoon at a time, until the dough just holds together.
  • On work surface sprinkled with flour, roll out dough with rolling pin sprinkled with flour to about 1/16 inch. Cut crackers out of the dough, about 5 inches long by 1 inch wide. Place on cookie sheet using spatula. If making rosemary crackers, brush with olive oil, and sprinkle with coarse sea salt.
  • Bake 25 to 30 minutes or until crackers are brown. Remove to cooling rack to cool before serving.

2 cups all-purpose flour, plus more for dusting
1 teaspoon salt
2 teaspoons sugar
2 tablespoons cold unsalted butter, cut in pieces
3/4 cup milk
Coarse salt, for sprinkling

Steps:

  • Preheat oven to 325 degrees. In the bowl of a food processor, pulse flour, salt, and sugar until combined. Add butter pieces, and pulse until mixture resembles coarse meal. With the machine running, gradually add milk; process until dough comes together. Cover dough with plastic wrap, and allow to relax at room temperature for 15 to 20 minutes.
  • Unwrap dough, and transfer it to a lightly floured surface. Roll into 17 1/2-by-17 1/2-inch square, 1/16 inch thick (if dough continues to spring back, allow to relax again, covered with plastic wrap, for another 10 minutes). Sprinkle dough lightly with coarse salt. Gently press salt into dough with the rolling pin.
  • Using a knife or pizza cutter, cut dough into 2 1/2-inch squares. With a thin spatula, transfer to ungreased baking sheets. Liberally pierce with fork. Bake for 20 to 25 minutes, until lightly browned and crisp, rotating baking sheets if needed for even cooking. Let cool on wire rack. Keep crackers in an airtight container, at room temperature, about 1 week.

8 oz shredded cheddar cheese
4 tablespoons unsalted butter, room temperature
1 teaspoon salt
1 cup flour
2 tablespoons ice water

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Using a hand mixer or standing mixer, combine cheese, butter, and salt in a large bowl.
  • Once combined, mix in the flour and add the ice water one tablespoon at a time.
  • The dough should hold together but crumble apart if you break it up in your hand. If it seems too dry, add a little more ice water.
  • Separate dough into two halves and pack together into discs. Wrap in parchment paper and chill in the refrigerator for 30 minutes.
  • Roll out dough to ⅛ of an inch (½ cm), pinching the cracks on the ends.
  • Cut into 1 inch x 1 inch (2 ½ x 2 ½ cm) squares and pierce a hole in the middle of each square for ventilation during baking.
  • Place the separated crackers on a parchment paper-lined baking sheet.
  • Bake for 13 minutes, or until golden brown.
