Steps:
- Beat powdered sugar, peanut butter and butter together. Dough will be crumbly. Add two tablespoons of milk and continue to beat together, until the dough softens. (Note, dough will still be crumbly- this is fine!)
- Working with about 1-2 cups of dough at a time, roll the dough into about 1/2 inch thickness on a flat, floured surface, and use cookie cutter to make eggs.
- Place the eggs on a cookie sheet and chill in freezer for at least one hour.
- When ready to dip, melt 1 bag of milk chocolate chips with 1 tablespoon of shortening in a microwave. You may need a bit more shortening to thin it out.
- Dip each egg, covering completely, and place on wax paper until set.
- If you need more chocolate, melt second bag with more shortening.

- Make the peanut butter filling: Add the peanut butter and coconut oil to a heat-safe / microwaveable bowl and heat in the microwave on high for 20 seconds OR place over a double-boiler on the stove until melted. Add the maple syrup, vanilla and sea salt and whisk to combine. Stir in the almond flour. If the peanut butter mixture is too sticky to handle, add more almond flour - about 1/2 tablespoon at a time. If the dough is too dry, add more maple syrup or a touch of unsweetened almond milk.
- Shape into eggs: Use a small cookie scoop (or about 1.5 Tbsp) of the dough, roll it into a ball and use your hands to form into eggs (makes about 12). Alternatively, you can pour or spoon into an egg shaped mold. Place eggs on a lined baking sheet and freeze for 20-30 minutes or until set. If using a mold, place the mold on top of a baking sheet. This helps the mold stay in place and freeze for 20-30 minutes.
- Make the chocolate shell: Melt dark chocolate and coconut oil over double boiler or in the microwave in 20 second increments, whisking well in between.Dip into chocolate: Use a fork to dip each egg into the melted chocolate and then return to the parchment line baking sheet. Repeat until all the eggs are covered. You can drizzle leftover chocolate on top of the eggs.
- Freeze: Place the pan back in the freezer for 10 minutes to set. Store in an airtight container in the fridge or freezer until ready to enjoy.

- Whey Protein Isolate. Now, let’s be honest. If you don’t have Swolverine’s Whey Protein Isolate, these little copycat Reese’s peanut butter protein eggs just aren’t going to be as good as could be.
- Peanut Butter. Is nut butter healthy? Yes. Is nut butter (peanut butter, particularly) essential for this recipe? Yes! The rule is to find a nut butter with the simplest ingredients.
- Chocolate. You can use any type of chocolate here, but if you’re looking for a real pretty egg, we recommend using chocolate melting chips or wafers that you can find at your local supermarket by the regular chocolate chips.

- In a large bowl, microwave peanut butter and butter until almost melted. Mix well or beat with an electric mixer until combined. Add vanilla and salt and mix until combined.
- Gradually add the powdered sugar, mixing with an electric mixer until combined. It will be a little crumbly at this point. Add enough milk so that a soft peanut butter "dough" comes together -- it will firm up as it cools so we want it on the softer side.
- Press into a 9x13" pan lined with parchment paper and chill in the refrigerator until cooled, about 30-60 minutes.
- Remove peanut butter filling from pan and peel away parchment paper. Use an egg shaped cookie cutter to cut shapes out of filling. Place on a parchment lined baking sheet. Rework any leftover peanut butter filling, rolling it into a ball and pressing it into the cookie cutter to make egg shapes with remaining filling. Place baking sheet in the freezer and freeze for 30-60 minutes, until firm.

- In a large bowl, beat the butter, peanut butter and salt with an electric mixer until creamy. (You can beat by hand, if desired.) With mixer on low, gradually add powdered sugar and water. Turn mixer to medium and beat until a crumbly dough forms.
- In a microwave safe bowl, heat the chocolate chips and shortening on high for 30 seconds. Stir, then repeat until chocolate is completely melted and smooth. Do not overheat. It should take about 90 seconds total. Microwaves vary, so it might take a little less time or a little more time depending on the power of yours.
- Place all of the icing ingredients in a large bowl (powdered sugar, meringue powder and water). With an electric mixer, beat on low for 6 minutes. Immediately transfer icing to four separate bowls. Add food coloring of choice. Pour icing into pastry bags. I used these tips: #101 for the 5 petal flowers, #129 for the swirl drop flowers, #68 for the leaves and #3 for the flower centers. See the Youtube links I referenced on the blog post for flower instructions.

- Beat together powdered sugar, peanut butter, and butter together. At this point the dough will be crumbly. Add two tablespoons of milk and continue to beat together until the dough softens. If the dough still seems crumbly that is ok.
- On a floured surface, roll the dough out to desired thickness. About 1/2 thickness. You can use egg cookie cutters or with a knife, shape the dough to look like eggs.
- When you are ready to dip them, add the chocolate and 1 Tbsp shortening in a microwave and melt 30 seconds at a time. Stirring it after every 30 seconds and being careful not to cook the chocolate to burn.

- In a medium bowl, mix together peanut butter, maple syrup and 1 tablespoon of coconut flour. Add another tablespoon of coconut flour if the batter is runny. Depending on your peanut butter, you may need to use more coconut flour. Anywhere from 1-3 tablespoons is usually perfect. I normally never need more than 2 tablespoons for these eggs though. The peanut butter mixture should be sticky like a wet cookie dough. If your peanut butter dough looks too runny or soft, feel free to pop it in the fridge for 10-20 minutes before forming the eggs.
- Use a cookie scoop to drop peanut butter mixture by the tablespoonful onto a parchment lined small baking sheet. Slightly flatten the top of each with your fingertips and form into an egg shape if you'd like. Place baking sheet in the freezer for 20 minutes-1 hour. The longer the eggs sit in the freezer, the easier they will be to dip in chocolate.
- Once you are ready to coat the eggs, melt the chocolate bar in a small saucepan over very low heat, stirring frequently. Transfer melted chocolate to a small warm bowl. Room temperature or slightly warm melted chocolate is better than 'hot' melted chocolate; if the chocolate is too hot, it can melt the peanut butter.
- Quickly use a fork to dip each peanut butter egg into chocolate. Make sure to coat evenly. Transfer back to parchment-lined baking sheet and sprinkle with a little coarse sea salt if desired. Immediately place baking sheet back in freezer for 30 minutes to 1 hour or as long as you'd like. Makes 8 large peanut butter eggs. Keep in freezer until ready to eat.
