ROSEMARY SIMPLE SYRUP



Rosemary Simple Syrup image

Like the essence of a Mediterranean summer distilled into a sweet herbal syrup. Stir it into lemonade, flavor a cocktail, glaze a cake, or churn it into a sorbet. So refreshing. Store in the refrigerator for up to 1 month.

1 cup white sugar
¼ cup rosemary leaves

Steps:

  • Combine water, sugar, and rosemary leaves in a small saucepan. Bring to a boil, stirring until sugar dissolves. Simmer for 1 minute. Remove from heat and let syrup steep, about 30 minutes.
  • Pour syrup into a sterilized glass jar through a mesh strainer to remove rosemary leaves; let cool.

A "tincture" is something that is made by combining flowers or herbs with alcohol. The alcohol basically pulls the essence of the herb or flower into its solution and "suspends" it there to use at a later time. Tinctures can sometimes be purchased readymade from health food stores. I hope you enjoy this one. It's from the book 'The Good Earth Bath, Beauty & Health Book' by Casey Kellar. The approx. shelf life of this is 1 year. The number of servings is a guess.

4 -5 sprigs fresh rosemary, of medium length,chopped into 1/2 inch strips
3/4 cup ninety-proof vodka (or any clear low-odor ninety-proof drinking alcohol, available from any liquor store)

Steps:

  • Gently"bruise" the rosemary strips by"hammering" very gently on the same.
  • Use your fist to do this on a wood cutting board.
  • Take an amber or dark glass bottle and pour the alcohol in it.
  • Add the cut and bruised rosemary strips to it.
  • Cover the bottle with its cap.
  • Shake vigorously for a minute.
  • Place in a cool and dark place for 6-8 weeks{shake for a minute every week}.
  • Strain the"tincture" from the remaining plant pieces.
  • Store in a cool and dark place.
