Steps:
- Place sugar and 1/4 cup water in a medium nonreactive saucepan. Heat over medium-high heat until sugar is caramelized.
- Carefully add 2 cups water and lemon juice; add vanilla bean and seeds and bring to a boil. Remove from heat and let stand for 1 hour.
- Discard vanilla bean and transfer syrup to an airtight container. Syrup may be kept, refrigerated, for up to 2 weeks. To serve, fill a 16-ounce glass with ice cubes and add 1 1/2 ounces syrup; top with seltzer and stir to combine.
COLA SYRUP
Making soda syrup at home is very easy and this cola syrup recipe gives you a natural cola flavour. Perfect to stir into soda water or replace store bought coca cola syrup for Sodastream and other soda makers.

- In a heavy based medium size pot place all ingredients EXCEPT the sugar with 2 cups of water. Bring to the boil, and then gently simmer with lid on for 20 minutes.
- Remove the pot from the heat. Line a fine sieve with a square of cheesecloth and place sieve on top of another medium sized pot. Pour your liquid through the sieve, gather the sides of the cheesecloth and squeeze out all the liquid (be careful not to burn yourself). Remove sieve and cheesecloth aromatics from the top of the pot.
- Place sugars into the pot with the liquid. Place on a very low heat and stir until sugar has dissolved. Do not bring it to the boil or simmer. As soon as the sugar has dissolved remove from the heat.
- Place cola syrup in a clean bottle and store in the fridge. Will make around three cups.

STRAWBERRY SODA SYRUP
We're going to take fresh strawberries and make our own homemade fruit syrup, which can be put into tea, lemonade, or made into the world's best strawberry soda!

Steps:
- Place strawberries into a heavy saucepan, add water, and bring to a boil. Stir, reduce heat to low, and simmer until strawberries soften, about 15 minutes.
- Strain juice into a separate saucepan, using a fine mesh strainer; discard strawberry pulp. Stir in sugar until dissolves. Bring strawberry juice back to a boil a second time.
- Reduce heat to medium and simmer for 5 minutes. Skim any foam from the top of the syrup. Turn off heat and let cool to room temperature.
- Pour syrup into a lidded container and refrigerate.

HOMEMADE SODA SYRUP

- Mix together water and sugar in a heavy sauce pan, along with whatever you want to flavor your soda. Put on stove on high heat. Heat to boiling, stirring occasionally. IMMEDIATELY remove from heat. Note: Really, watch closely so it doesn't boil over. It boils over easily.
- Turn stove down to simmer (lowest setting), and return pan to heat. Make sure that you've waited long enough for the heat to actually go down to a lower setting, so you aren't in danger of boiling the syrup over again. Simmer for 15-20 minutes, stirring occasionally.
- Add 1/4 tsp cream of tartar, and let cool.
- Pour into a container and save to use! Add a small amount to the bottom of a glass, and top it off with carbonated water. We used about 3 tablespoons soda syrup for our 12 oz. bottle of soda, but you can use whatever tastes right.

- Stir the water, lemon zest, lime zest, orange zest, cinnamon sticks, dried orange peel, whole coriander seed, nutmeg, and green bean coffee powder (if using) in a large saucepan over medium heat.
- Stir in the sugar and bring to a boil.
- Continue stirring until the sugar dissolves. (The spices will not dissolve)
- Remove syrup from the heat.
- Add the lemon juice, lime juice, orange juice, browning sauce, and pure vanilla extract to the saucepan mixture and stir.
- Let mixture cool, then use a fine mesh strainer and strain syrup into a mason jar or other sealable bottle for storage.
- To make one cola drink: Combine 1/2 cup of the cola syrup with 1 1/2 to 2 cups of seltzer water (pour slow as the mix will fizz, just as regular soda).
- Add ice, if desired, and serve.

- Combine blueberries, water, and lemon juice in a saucepan over medium heat. Cover and bring to a simmer for 10 to 15 minutes or until berries have softened and burst.Strain syrup through a fine mesh sieve, pressing out as much liquid as possible.Return strained syrup to saucepan and add sugar and citric acid. 5 EASY HOMEMADE SODA SYRUPS

- Place all the ingredients in a saucepan.
- Heat over medium-heat until the sugar has dissolved and the mixture comes to a gentle boil.
- Lower the heat and simmer for about 20 minutes, till the juice has a simple syrup-like consistency.
- Pour the syrup through a sieve to remove the pulp, zest, and sage leaves. Squeeze as much of the syrup out as possible using the back of a spoon.
- Pour this syrup into a sterilized heat proof glass bottle or a mason jar.
- Place all the ingredients in a saucepan and heat until the sugar dissolves. Bring it to a boil and then lower the heat to simmer until the pineapple softens.
- Turn off the heat and let the star anise steep in the pineapple juices for about 30 minutes.
- Remove the star anise and puree the pineapple.
- Place the puree on a double layer of cheesecloth to strain the liquid. Gently squeeze to get all the liquid out, then discard the pulp.
- Pour the pineapple syrup into a sterilized glass bottle or jar.
- Place all the ingredients in a saucepan. Heat to dissolve the sugar. Cover with a lid and let the peaches "poach" in the liquid and soften for a few minutes. Simmer on low heat, uncovered for about 20-30 minutes till the liquid becomes syrupy.
- Remove the thyme sprigs and puree the peaches.
- Place the puree on a double layer of cheesecloth and strain the liquid out.
- Gently squeeze the pulp to get as much liquid from the puree, and pour the syrup into a sterilized bottle or jar.
- Place all the ingredients in a saucepan. Heat until the sugar is dissolved and the liquid is boiling.
- Lower the heat and simmer for 15 minutes.
- Puree the strawberries and pass the puree through a double cheesecloth. Squeeze gently to get as much liquid out as possible and discard the pulp.
- Pour the syrup in a sterilized glass bottle or jar.
- Bruise the lemongrass stalks (by hitting the stalk along the length of it with the blunt side of a knife). Cut the stalk into 2-3 pieces.
- Place all the ingredients in a saucepan and heat until the sugar dissolves.
- Bring the liquid to a boil and lower the heat to simmer until it achieves a syrup-like consistency.
- Pour the liquid through a fine sieve to remove the pulp, lemongrass and zest.
- Pour syrup into a sterilized bottle or jar.
- Preheat oven to 250°F/ 120°C.
- Place the lids on the syrup filled jars loosely (don't screw them on tightly).
- Place the bottles on a baking tray, making sure they don't touch each other.
- Place the baking tray in the preheated oven and keep the syrup filled jars in the oven for at least 30 minutes up to one hour.
- While wearing oven mittens, take out the baking tray and carefully screw on the lids tightly on the bottles/jars, while they are still hot (PLEASE BE VERY CAUTIOUS AS THEY WILL BE VERY HOT).
- Leave them to cool completely to room temperature and store in the fridge overnight.
- Use the syrup with Seltzer water/club soda to make homemade sodas or mix them with spirits for cocktails, or use as a cordial to mix with water and ice for a refreshing drink.
