"I sampled a wonderful gourmet bread during an out-of-town trip," says Melissa Vannoy of Childress, Texas. "When I got home, I tried to re-create it in my bread machine and came up with this hearty whole wheat bread chock-full of sunflower kernels, and poppy and sesame seeds."

2/3 cup plus 2 teaspoons water (70° to 80°)
1 tablespoon butter, softened
1 tablespoon honey
2 tablespoons sesame seeds
2 tablespoons sunflower kernels
2 tablespoons poppy seeds
3/4 teaspoon salt
1 cup bread flour
1 cup whole wheat flour
3 tablespoons nonfat dry milk powder
2 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

This is a delicious, nutritious breadmaker recipe that I got off a package of Bob's Red Mill flaxseed. Only way I've altered it is by adding 1/8 cup of wheat gluten to it--as I do all my breadmaker recipes. Seems to make them stay fresh a bit longer!

2 cups unbleached white flour
1/8 cup wheat gluten

1 tablespoon poppy seed
2 teaspoons active dry yeast

Steps:

  • Add ingredients to bread machine in the order recommended by the bread machine manufacturer and select the basic bread cycle, large loaf, light setting. After about 5 minutes, be sure to check the dough to see if you need to add a bit more water or flour.
  • Let cool completely on a wire rack before slicing.

1 egg white, beaten

Steps:

  • Measure carefully, placing all ingredients except egg white and 1 teaspoon each poppy seed, sesame seed and fennel seed in bread machine pan in the order recommended by the manufacturer.Select Dough/Manual cycle. 2 tablespoons sugar
1 1/2 teaspoons salt
1 1/2 teaspoons poppy seed

1 teaspoon fennel seed
1 package regular active or fast-acting dry yeast
1 cup water
2 tablespoons butter or margarine, softened
1 1/2 to 2 cups Gold Medal™ whole wheat flour
1 egg white, beaten
1 teaspoon poppy seed
1 teaspoon sesame seed
1 teaspoon fennel seed

Steps:

  • In large bowl, mix 1 1/2 cups of the all-purpose flour, the sugar, salt, 1 1/2 teaspoons poppy seed, 1 1/2 teaspoons sesame seed, 1 teaspoon fennel seed and the yeast. In 1-quart saucepan, heat water and butter over medium heat, stirring frequently, until very warm (120°F to 130°F); stir into flour mixture until blended. Stir in remaining all-purpose flour and enough of the whole wheat flour to make dough easy to handle.
  • Place dough on lightly floured surface; gently roll in flour to coat. Knead about 8 minutes or until smooth and springy. Grease large bowl with shortening or cooking spray. Place dough in bowl, turning dough to grease all sides. Cover; let rise in warm place about 1 hour or until dough has doubled in size. (If using fast-acting yeast, do not let rise 1 hour; cover and let rest on floured surface 10 minutes.)
