5 large eggs
1/4 lb butter
1 cup heavy cream
2 cups milk
1 loaf white bread
1 lb white chocolate
3/4 cup sugar

Steps:

  • Preheat the oven to 360°F (182°C). Remove the crust from the bread and soak it in the heated milk and cream. Beat the mixture by hand or in a mixer until the pieces of bread are reduced to the size you want. Melt the chocolate and butter in a double boiler and add that into the bread mixture.
  • In a separate mixing bowl, beat the eggs and sugar until creamy. Add that to the bread mixture and stir until uniform. Pour the batter into a buttered pan and place that pan in a larger pan of hot water in the oven. Bake for 45 minutes, or until the center is set.

From our honeymoon cruise with Carnival. This chocolate pudding-centered cake was a staple on the menu in 2007, but after finding the recipe online, we can make it anytime we want. My husband and I are health conscious and this cake definitely isn't, but enjoying it about once a year just takes us back... and some things are just good for the soul. As a side note, varying times and temperatures varies in turn the center of the cake, which can be pudding-like, fudge thick or, my personal preference, molten sauce.

1/4 cup dark chocolate chips
1 5/8 ounces butter
1 egg
1/8 cup sugar
1/8 cup flour (plus an extra pinch or two)

Steps:

  • Melt chocolate and butter over low heat.
  • In mixing bowl, mix eggs and sugar, then add flour. Slowly whisk into the melted chocolate mixture.
  • Pour into greased 4-ounce ramekins.
  • Bake at 400 F for 12-14 minutes.
  • Makes one serving to share. Double or triple recipe for guests.

1 quart heavy cream
2 cups white sugar
3 eggs, lightly beaten
2 tablespoons vanilla extract
1 (12 ounce) package white chocolate chips
1 (12 ounce) package white chocolate chips
1 cup heavy cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Place French bread in a large bowl. Pour heavy cream over bread and let soak. Add sugar, eggs, and vanilla extract; mix all together with your hands. Add white chocolate chips and mix thoroughly.
  • Bake in the preheated oven until bubbly, 40 to 45 minutes.
  • While bread pudding is baking, prepare the sauce. Combine white chocolate chips and heavy cream in a small saucepan over low heat. Cook, stirring constantly, until melted. Drizzle a small amount of sauce over each serving.
