HONEY GLAZED SALMON WITH BROWNED BUTTER LIME SAUCE

- Working in batches of two salmon fillets at a time (or using two skillets, because you don't want to overcrowd the salmon when cooking it on the stove-top so it cooks more evenly), place salmon fillets on a cutting board or plate and sprinkle 1 teaspoon flour over each side of the salmon fillets and spread flour to evenly coat.
- Evenly drizzle 3/4 teaspoon honey over each side of the flour coated salmon fillets. Drizzle 1 tablespoon olive oil into a 10 inch non-stick or cast iron skillet, swirl pan to evenly coat bottom and heat over medium heat. Once oil it hot, carefully place salmon in pan and cook over medium heat, 3-5 minutes per side until salmon has cooked through and bottom has nicely browned.
- Plate salmon immediately, drizzle each fillet with 1 1/2 - 2 tablespoon Browned Butter Lime Sauce and sprinkle with lime zest. Serve warm.
- To Make The Browned Butter Lime Sauce: Place butter in a small (light colored to monitor browning) saucepan. Cook over medium heat, stirring pan constantly, until butter is fragrant and has turned a brownish coloring. Careful not to burn.
- Remove browned butter from heat and add it, along with lime juice, garlic, salt and pepper to a blender. Blend on low speed for about 30 seconds, until well blended. Pour sauce into a small glass dish (note: whisk butter mixture with a fork before pouring onto salmon as it will separate, rewarm if needed).

There are SO many ways to prepare salmon, and yet I'm always open to a new recipe. Salmon seems to be the most popular fish right now, so it's nice to have plenty of new ideas to change things up a bit. To keep this a guilt-free meal, serve with some steamed broccoli and brown rice.

- Preheat broiler to high. Line a rimmed baking sheet with foil and spray with nonstick cooking spray. Place fillets (skin-side down) on the baking sheet and sprinkle evenly with the garlic pepper. Place baking sheet under broiler and broil for 3 minutes.
- Meanwhile, for the glaze, heat olive oil in a small saucepan over medium heat. Whisk in honey, lime zest, lime juice and soy sauce. Remove from heat and set aside.
- Remove baking sheet from oven. Brush or spoon glaze evenly on the fillets. Return the baking sheet to the oven and broil for 4-7 minutes more or until the fish flakes easily with a fork. Remove from oven. Sprinkle salmon with cilantro (if desired) and serve.

- Swirl olive oil in a large frying pan over medium heat. Pat the fillets dry with a paper towel, then dust lightly with flour. Using your hands, pat the flour evenly over the top of the fillet (if fillet is skinless, do this on both sides). Drizzle a small amount of honey over the top of the floured area and spread to coat.
- Place salmon in hot pan and cook 3-5 minutes per side, or until a nice caramelized brown crust is achieved and the salmon is cooked to desired temperature (I cook mine medium). Remove to serving plate and drizzle with Brown Butter Lime Sauce and sprinkle with lime zest. Serve.
- In a small saucepan, brown the butter over medium heat, swirling frequently. The butter will melt, then foam and bubble, then begin to brown. As soon as it smells nutty and the color has changed, remove from heat (if you don't watch it closely here, it will burn).
