⅓ cup honey
¼ cup dijon mustard
2 tablespoons olive oil
2 cloves garlic, minced
2 teaspoons salt
1 teaspoon pepper
4 boneless, skinless chicken thighs
¼ cup bacon, chopped
4 cups romaine lettuce, chopped
1 cup cherry tomatoes, halved
¼ red onion, sliced
1 avocado, pitted and sliced

Steps:

  • In a small bowl or liquid measuring cup, mix the honey, mustard, oil, garlic, salt, and pepper.
  • Place the chicken thighs in a dish and pour the marinade over the chicken, reserving half for later.
  • Flip the chicken thighs over, fully covering them in the marinade.
  • Cover the dish with plastic wrap and refrigerate for 30 minutes to an hour.
  • Heat a large skillet over medium heat, and place the chicken thighs in the pan.
  • Cook for five minutes on each side, or until the chicken is cooked through.
  • Remove the chicken and set aside.
  • Wipe the pan clean and place back on the heat.
  • Add the chopped bacon to the pan and cook until crispy, about ten minutes.
  • Transfer the bacon to a paper towel-lined plate to drain.
  • Add three tablespoons of water to the reserved marinade and stir to combine.
  • Slice the chicken into strips.
  • Add the romaine, cherry tomatoes, red onion, avocado, cooked bacon, and chicken to a bowl and drizzle with the remaining honey mustard dressing.

2 cups seedless red grapes, halved
2 cups diced apples
½ cup chopped celery
½ cup chopped walnuts
½ cup mayonnaise

Steps:

  • Combine chicken, grapes, apples, celery, and walnuts in a large bowl. Combine mayonnaise, honey, and Dijon mustard in a small bowl, stirring well. Gently stir into chicken mixture. Cover and chill.

1/4 cup red wine vinegar
1/4 cup orange juice
2 tablespoons olive oil
1 teaspoon orange zest (optional)
1 tablespoon honey
1 tablespoon Dijon mustard
3 tablespoons Mrs. Dash seasoning mix (Original Blend)
1 teaspoon salt (optional)
3 cups chicken (cooked-cubed)
1 1/2 cups celery (thinly sliced or diced)
1 (11 ounce) can mandarin orange segments (drained)
1/3 cup almonds (sliced-toasted)
1 cup chow mein noodles (optional)
lettuce leaf

Steps:

  • Combine vinegar,oil,orange juice,zest,salt,Mrs. Dash,honey & dijon mustard in a container with a tight fitting lid, cover & shake well to combine.
  • Combine chicken and celery in a medium bowl, pour dressing over chicken mixture and toss to mix well.
  • Cover & chill; 2-3 hours.
  • At the same time, place canned mandarin oranges in refrigerator so they will be cold when you prepare the salad.
  • To prepare; add drained mandarin oranges & almonds to chilled chicken mixture, toss to combine.
  • Serve on lettuce leaves, topped with chow mein noodles if you like.

½ cup all-purpose flour

2 large eggs
2 tablespoons water
1 ½ pounds skinless, boneless chicken breast halves
8 cups mixed spring salad greens
2 large carrots, peeled and sliced diagonally
1 cup sliced radishes
¾ cup mayonnaise
3 tablespoons prepared yellow mustard
3 tablespoons honey
4 teaspoons Dijon mustard
1 tablespoon lemon juice

Steps:

  • Heat oil in an extra-large skillet over medium heat. Add panko and garlic powder. Cook, stirring, until toasted, 2 to 3 minutes. Transfer to a shallow dish and let cool, 2 to 3 minutes. Stir in parsley.
  • Coat an air fryer basket with cooking spray and preheat air fryer to 400 degrees F (200 degrees C).
  • Meanwhile, in another shallow dish, stir together flour, salt, and pepper. In a third shallow dish, whisk together eggs and water.
  • Cut chicken breasts lengthwise into 1x3-inch strips. Dip chicken strips into flour mixture, then egg mixture, then panko mixture to coat.

I got this from an Easy Stovetop Chicken of the World cookbook. It's easy to make ahead and bring to work as a nice refreshing lunch.

1 lb boneless skinless chicken breast
2 garlic cloves
3 tablespoons oil
salt and pepper
1 tablespoon honey
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1/2 honeydew melon
2 kiwi fruits
radicchio, leaves

Steps:

  • Rinse chicken in cold water, pat dry with paper towels and cut into 1/2 inch cubes. Peal and mince the garlic. Heat 1 T oil in a skillet over medium heat and add the garlic. Saute for 1 minute until garlic is fragrant stirring constantly. Salt and pepper the chicken and add to pan. Cook for 4 - 5 minutes until lightly browned on all sides and cooked through. Remove from pan and let cool.
  • Dressing: in a medium bowl stir the honey, mustard and lemon juice. Whisk in 2 tablespoons of oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Set aside.
  • Use a melon baller to get honeydew balls (or cut into small squares). Peel the kiwis and cut them in half lengthwise and then in slices.
  • In a large bowl combine the chicken with the melon balls and kiwi's, add dressing and gently stir.
  • Arrange on plate over radicchio leaves.
