HONEY ROASTED NUTS
Crunchy and salty-sweet, these honey roasted nuts make a great homemade hostess gift - assuming you'll resist the temptation to polish them off by yourself!

Steps:
- Preheat oven to 300 degrees F. Place the butter and honey in a glass baking dish. Heat in the oven until melted, about 2 minutes.
- Add the nuts and the smoked paprika. Toss to coat.
- Roast the nuts until golden, about 30 minutes, stirring every 10 minutes.
- Remove the nuts from the pan and spread them evenly on wax paper or parchment paper. Sprinkle with the salt. Allow to cool and crisp up, about 20 minutes. Store in an airtight container, at room temperature.

- Transfer to a food processor and process until a thick paste forms. Add remaining ingredients and process until smooth.

HONEY-ROASTED WALNUT BUTTER

Steps:
- Soak walnuts with water in a large bowl and leave them overnight. This will remove some of the bitterness in the walnuts.
- Drain the water from the walnuts and let it dry for 10minutes.
- Preheat the oven to 350°.
- Add in 2 tablespoon honey and mix well until all walnuts is coated. Spread the walnuts out in a single layer on the baking tray. Toast the walnuts in oven about 15 minutes, be careful don't let walnuts turn dark.
- Take the walnut butter out of the oven and allow them to cool entirely.
- Put the toasted walnuts in the food processor. Run the processor until they become small chunks. If you like chunky nuts in your butter, put aside 1-2 tablespoon of the chunky nuts.
- Add salt and cinnamon and pulse until it start to turn sticky. Taste the walnut paste to see if you want more salt, honey, or cinnamon.
- Voila.. You have walnut butter. Put the walnut butter into a small jar and can last 2 weeks.
HONEY ROASTED WALNUTS
Sweet and spicy - a great quick snack. Best to keep in an airtight container for about a week at room temp.

Steps:
- Combine honey, sugar, salt, cayenne and cinnamon in a small pot over medium heat,.
- Stir once then cook 3 minutes till sugar dissolved.
- Add walnuts, stir to coat.
- Simmer 5 - 7 minutes or until syrup is lightly browned.
- Drain through a coarse sieve, discard cinnamon stick.
- Place walnuts on a wire rack over a 19 X 29 cms rectangular slice pan.
- Cook in moderate oven 180 C for about 8 minutes or until nuts have darkened slightly.
- Remove from oven, cool on wire rack.
- Nuts will crisp as they cool.

- Mix honey, butter, and half of cinnamon in saucepan and heat to boiling. Cook for 2 minutes, stirring constantly.
- In medium mixing bowl, pour honey mixture over nuts, stir well.
- Pour mixture onto non-stick cookie sheet and spread evenly.
- Bake for 10-15 minutes until nuts are lightly browned. Allow to cool.
- Mix sugar and remaining cinnamon, and toss with nuts.
