Cool and delicately flavored, this granita is an ideal dessert after a barbecue or other spicy meal. Plan ahead as you'll need to start 4½ or 5 hours before you plan to serve the granita. This untried recipe is from the May 28, 2006 edition of the Milwaukee Journal Sentinel and posted for Zaar World Tour II.

2 lbs cantaloupe or 2 lbs persian melon
3 1/2 tablespoons lemon juice (divided)
1/3 cup sugar
1 lemon, zest of, grated
1/4 teaspoon ground allspice
1/4 teaspoon fresh ground black pepper (optional)
1 pinch ground nutmeg
fresh mint sprig, garnish (optional)

Steps:

  • Peel, halve, and seed melons; cut into chunks and place in medium-sized bowl, reserving ½ cup of the melon chunks in another small container.
  • To the reserved ½ cup of melon, add 2 tablespoons of the lemon juice; toss to coat; cover and refrigerate.
  • To remaining larger bowl of melon, add sugar, remaining lemon juice, lemon zest, allspice, pepper (if using) and nutmeg; toss to mix; cover and marinate melon in refrigerator for 2-12 hours.
  • Strain juices from larger bowl of melon chunks into a small saucepan; bring to a boil over high heat and cook 1 minute; remove from heat and cool to room temperature.
  • Combine marinated melon chunks and reduced juices in a food processor or blender; puree until smooth; pour into a bowl, cover, and chill for 2 hours.
  • Pour pureed and chilled mixture into ice cream freezer and freeze according to manufacturer's directions; serve topped with reserved diced melon and fresh mint sprigs.
  • NOTE: The name "granita" comes from a Spanish word meaning small grain or, by association, granular texture.

From June All You 2011. If you wanted a little more lime and some more texture you could add some zest to it. in addition you could also swap the honeydew with another melon and can also use lemon juice if preferred.

1/2 cup sugar
2 tablespoons lime juice
1 honeydew melon (about 5 pounds)
1 pinch salt

Steps:

  • Place sugar in a small pan with 3 tablespoons water and lime juice.
  • Stir over medium heat until sugar is dissolved, around three minutes.
  • Remove from heat.
  • Cut honeydew in half, remove seeds, peel and chop into chunks.
  • Transfer to a food processor.
  • Add sugar mixture and salt.
  • Process until slushy.
  • Transfer mixture to a 9-inch metal square baking pan and freeze for an hour.
  • Stir with a fork to break up chunks around the edges.
  • Freeze until completely frozen or about 2 hours longer.
  • Continue stirring with fork every 30 minutes to loosen ice crystals.
  • Serve in chilled glasses or bowls.

  • In a blender or food processor, puree the the melon with the orange juice, sugar and Midori. Taste the mixture. Depending on the flavor and sweetness of the melon you can add sugar, lemon juice or Midori as needed to perk up the flavor.
  • Pour the mixture into an 13"x9" baking dish (preferably metal for quicker freezing). Set the dish in the freezer. After 30 minutes, remove the pan from the freezer and use a fork to scrape through the mix and break up the ice that has formed into smaller pieces. Return the pan to the freezer.
  • Repeat the procedure every 30 minutes for 3 hours until the granita is completely frozen with a granular texture similar to a snow cone or shaved ice.
