EASY CARAMEL SAUCE MADE WITH MILK
Steps:
- Gather the ingredients.
- Combine the sugar and water in a small saucepan. Put the saucepan over medium-high heat and cover the pan with a lid.
- Once the water has come to a rolling boil, remove the lid. Do not stir the caramel after this point. If your caramel is cooking unevenly, you can gently swirl the pot to even out the sauce.
- Cook the caramel until it is a golden-brown color. Once it is a dark amber, remove from the heat and slowly add the milk while whisking. Be careful: The milk can boil up quickly when it hits the hot caramel. The caramel can also separate because the temperature changed too quickly.
- Once the milk has been added, gently warm the mixture over medium heat. Whisk the mixture together and boil for 1 minute until the sauce thickens slightly. Add the salt and stir the mixture until it is well combined and liquid.
- Once the milk has combined with the sugar and becomes completely incorporated, turn off the heat. Add the butter and whisk to combine.
- Allow your caramel to cool before serving.

- Add sugar and butter to a small saucepan over medium heat.
- As the butter melts, stir to combine with the sugar.
- Meanwhile, microwave the milk to warm it.
- Cook to a deep amber. Be careful not to let it burn! You can also caramelize less if you want a less intense caramel flavor.
- When sugar is ready, remove from heat.
- Add milk in a steady stream as you stir. The sugar will seize up and there will be sizzling, but keep stirring.
- Place back on stovetop over low heat. Make sure to keep the heat sufficiently low so that you don't boil the milk.
- Continue stirring until all of the caramelized sugar is melted into the milk.
- Store the left overs in the fridge.

BEST EVER HOT CARAMEL SAUCE
We love this yummy sauce best over vanilla ice cream, but it's also great on hot apple pie! My kids pick Hot Caramel Sundaes over birthday cake every year! This sauce makes great teacher and/or Christmas gifts (pour in 1/2 pint jars and tie with festive ribbon). Remind them it needs to be refrigerated!

Steps:
- Melt butter in heavy saucepan over low heat. Add milk and sugars. Bring to a rolling boil over medium heat stirring constantly. Boil 1 minute.
- Cool slightly.
- Pour into blender, add vanilla, and cover and blend on medium until smooth. Serve over vanilla ice cream. Store covered in refrigerator up to 2 weeks (It never lasts that long at our house!).
