450 g (1lb) dried beans
Water
Salt
Seasoning (eg garlic, cumin, paprika, thyme, chilli)

Steps:

  • Pick through the beans and discard unwanted debris.
  • Soak the beans overnight in water.
  • Preheat the oven to fan assisted 160C / 180C / 350F / gas 4.
  • Rinse and drain the beans and transfer them into an oven proof casserole pot.
  • Add enough water so that the beans are covered by 3cm of water.
  • Add some salt and seasoning to your preference.
  • Then cover and bake them in the oven for 80 mins.
  • Check the beans if they are cooked through.
  • If not then bake them for a little bit longer checking them every 10 mins.

1 pound dried black-eyed peas, sorted and rinsed
1 large onion, chopped
2 tablespoons olive oil
2 ounces sliced salt pork belly, chopped
6 garlic cloves, minced
2 bay leaves
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
1 carton (32 ounces) reduced-sodium chicken broth
2 smoked ham hocks

Steps:

  • Place peas in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse peas, discarding liquid; set aside., In the same pan, saute onion in oil until tender. Add the pork belly, garlic, bay leaves, thyme, pepper flakes and pepper; cook 1 minute longer., Add the broth, ham hocks and peas; bring to a boil. Reduce heat; simmer, uncovered, for 35-40 minutes or until peas are tender, stirring occasionally and adding more water if desired., Discard bay leaves. Remove ham hocks; cool slightly. Remove meat from bones if desired; finely chop and return to pan. Discard bones. If desired, top with additional fresh thyme.

1 slice of thick cut bacon (cut into 5 pieces (regular if you don't have thick))
1 14.5 oz can black eyed peas (drained)
½ cup water
1 Tbsp butter
½ tsp garlic powder
½ tsp onion powder
¼ tsp cayenne pepper (optional)
1/2 tsp granulated white sugar
½ tsp vinegar (white or cider)
Salt and Pepper to taste

Steps:

  • In a medium sized saucepan, cook the pieces bacon over medium heat until crispy.
  • When bacon is crispy, add the drained peas, water, butter, garlic and onion powders, cayenne pepper (if you like a tiny bit of spice), sugar and the vinegar. Salt and pepper to taste.
  • Stir frequently until heated through and the water begins to boil (a couple of minutes). Serve hot.

1 lb shelled black eyed peas, or 3/4 lbs dried, soaked
water to cover peas by 1 inch, more as needed
3 chicken bouillon cubes
1 Tbsp bacon grease
1 large onion, diced
1 Tbsp garlic, minced
1/2 medium red bell pepper, diced
2 tsp dried chives
1 Tbsp dried parsley
1 tsp celery powder (optional)
1/2 c cut green beans (fresh or frozen)
1/2 - 1 c cured ham chunks or pickled meat, 1" cubes
2 Tbsp butter or margarine

Steps:

  • 1. In a large saucepan bring water, bouillon cubes, bacon grease, peas, onions, bell peppers, garlic, seasonings and ham to a boil. Save butter or margarine until the end.
  • 2. Reduce heat and cover. Simmer on medium low heat until peas are tender and liquid starts to thicken. Taste for seasonings and add salt if needed.
  • 3. Just before serving, add butter or margarine and stir well. Enjoy!

1 pound dried black-eyed peas (fresh or canned black-eyed peas can be substituted) 2 tablespoons vegetable oil 6 ounces pork shoulder, diced into 1/2-inch cubes 4 strips thick sliced bacon, cut into 1/2-inch pieces 1 medium onion, small diced 4 garli

Steps:

  • 1. If using dried black-eyed peas, put them in a large pot and cover with about 4 inches of water. Soak the peas overnight, then drain the water and rinse. Alternatively, you can "quick-soak" the peas by bringing them and the water to a boil for 2 minutes. After this, remove them from the heat, cover the pot and soak the peas for 1 hour. Then, drain and rinse the peas. Heat the oil in a large pot over medium-high heat. When the oil is shimmering, add the pork. Sear until the pork is browned on all sides, 4 to 5 minutes. Add the bacon, onion and garlic to the pot and cook, stirring, until the onion and garlic are lightly browned, about 6 to 8 minutes. Add the salt, black pepper, cayenne and garlic powder. Cook until the entire mixture is coated with the spices, about 2 minutes. Pour in the stock and water and drop in the bay leaves. Bring the mixture to a boil, then reduce the heat and simmer, covered, for about 30 minutes. When the pork begins to fall apart, add the prepared peas to the pot and simmer until the peas are very soft, about 1 to 1 1/2 hours. (Cooks Note: Using the back of a spoon, smash some of the peas against the inside of the pot then stir them into the mixture. This will break up some of the peas and give them a creamier consistency. Alternatively, you can puree 1 cup of the peas and broth in a blender or a food processor, then return the puree to the pot.) Taste for seasonings, and add some hot-pepper vinegar, if desired. 1 Tablespoon Oil
6 oz. Pork Shoulder (diced in 1/2 " pieces or 1 ham hock)
2 Tablespoons Butter
4 Strips Bacon (thick cut back cut into 1/2" pieces)
1 Onion (yellow, minced)
1 Stalk Celery (sliced)
4 Cloves Garlic (minced)
1 1/2 teaspoons Salt
1/2 teaspoon Pepper
1 teaspoon Garlic powder
1 teaspoon Smoked Paprika
2 teaspoons Balsamic Vinegar
4 Cups Chicken Stock
2 Cups Water
3 Bay Leaves
1 Cup Collard Greens (chopped in 2" pieces *optional)

Steps:

  • If using dried beans, place in a large pot with 4 inches of water and allow to soak overnight, then drain and rinse. This is essential!
  • Heat the oil in a pot over medium-high heat, once shimmering add the pork and cook until browned on each side, 4-5 minutes.
  • Add butter and once it has melted, add the bacon, onion, celery and garlic and cook, stirring until softened and browned, about 7-8 minutes.
  • Sprinkle the salt, pepper, garlic powder, smoked paprika and balsamic vinegar in and cook another 2 minutes to bloom the spices, this brings out more flavor.
  • Pour in the liquids and bay leaves then reduce to a simmer for 30-40 minutes.
  • As the pork begins to fall apart, add the beans and greens and continue to simmer until the beans are soft, 1 1/2 hours.
  • Add a dash of hot sauce if desired, discard bay leaves and serve!

1/2 pound bacon strips, cooked and crumbled
1 tablespoon butter
1 large onion, chopped
1 garlic clove, minced
1/2 teaspoon dried thyme

Fresh thyme leaves and additional cooked and crumbled bacon, optional

Steps:

  • Rinse and sort black-eyed peas. Place peas and bacon in a Dutch oven; add water to cover. Bring to a boil; boil 2 minutes. Remove from heat; let soak, covered, 1 hour. Do not drain., In a cast-iron or other heavy skillet, heat butter over medium-high heat. Add onion; cook and stir until tender. Add garlic; cook 1 minute longer.
