How to Cook Dried Squid Fried Rice image

A unique kind of fried rice combining fried dried squid, eggs and fried rice. No need for you to cook them separately.

1/4 kilo dried squid
5 cloves of garlic
3 cups of rice
3 eggs (beaten and scrambled)
2 tsp. vinegar
cooking oil
Salt and pepper to taste

Steps:

  • Fry the dried squid until crispy. Drain the excess oil by placing it on paper towel.
  • Then cut into thin strips or just shred it to pieces.
  • Reduce the oil to just about a tablespoon in the pan where you fried the dried pusit.
  • Then sauté the garlic until fragrant and golden brown.
  • Add in the rice then stir fry and let all the ingredients mix together thoroughly.
  • If the rice is too dry, don't be afraid to add a little water or chicken stock.
  • This will make the rice softer and more enjoyable to eat.
  • Then toss in the scrambled eggs into the fried rice.
  • Stir fry again to mix the beaten eggs with the rice.
  • Then last but not the least, season with a dash of salt and pepper and drizzle with vinegar.

Flash Fried Squid image

The trick to cooking delicious squid is making sure that it spends little time in the pan -- flash-frying it is the best way to keep the squid flavorful and tender. This recipe comes from Tom Douglas.

2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon peeled and grated fresh horseradish root
Zest of 1 lemon
2 cups all-purpose flour
1 tablespoon paprika
1 teaspoon coarse salt, plus more for serving
1 teaspoon freshly ground pepper, plus more for serving
Pinch cayenne
Peanut oil, for frying
1 1/2 pounds cleaned squid, tubes cut into 1/4-inch rings
Parsley Aioli
Lemon wedges, for serving

Steps:

  • Prepare gremolata: In a small bowl, combine the parsley, horseradish, and lemon zest; set aside.
  • In a medium bowl, combine the flour, paprika, salt, pepper, and cayenne; set aside.
  • To cook the squid, heat 2 inches of oil to 375 degrees in a straight-sided pot. Be sure not to fill your pot more than halfway up the side with oil, because it will foam during frying.
  • Pat the squid dry, and toss in the seasoned flour mixture to coat. Let stand 1 minute. Shake the floured squid in a sieve to remove any excess flour. Fry in batches, without crowding, until golden brown, 1 to 1 1/2 minutes. Drain the squid on paper towels. (Frying a batch of squid will bring the temperature of the oil down. Be sure to reheat the oil in between batches and check the temperature again with a deep-fry thermometer before adding more squid.)
  • Season squid with salt and pepper. Sprinkle the gremolata over squid. Serve immediately with aioli and lemon wedges.

  • Boil hot water (about 2 cups). Put squid in a metal colander or sieve. Gently pour hot water over the dried squid strips. This process softens the squid but also removes some of the seasoning, making it less salty. Skip this step if you prefer chewy ojingeochae. If you do skip, also remember to use less soy sauce.
  • Mix gochujang, gochukaru, sake, soy sauce, sugar, garlic powder and maple syrup to make seasoning for dried squid recipe.
  • Heat pan on medium low heat and simmer the seasoning sauce for 2 minutes. Stir a few times. We don’t want to reduce the sauce, just cook the raw taste out of it.
  • Turn heat to LOW. Toss and mix dried squid strips with the sauce. Mix until squid strips are evenly coated. Turn OFF heat.
