How to Make Cabbage Digestible, C.d. Langhorne image

C. D. was the father of the famous Langhorne sisters, including Nancy, Lady Astor. He contributed this to a cookbook called "Key to the Pantry" which was published in Danvllle, VA in 1898. Taken from "Virginia Cookery Past and Present" Cooking time is a guess on my part.

1 cabbage
1 red pepper
bacon, several slices
2 cups boiling water

Steps:

  • Take a cabbage, wash well, and cut up into pieces about the size of your hand.
  • Put them into the boiling water, or maybe a little more if your cabbage is a big one, along with 5-6 slices bacon.
  • Add a pod of red pepper, cover, and cook slowly until done.
  • This will never disagree with you.

Number Of Ingredients 4

1 large head green cabbage
Kosher salt
2 tablespoons salted butter (or olive oil)
Fresh ground pepper

Steps:

  • Bring large pot of water to boil with 1 tablespoon kosher salt.
  • Remove any tough or brown leaves from the outer portion of the cabbage. Shred the cabbage.
  • Boil the cabbage for 12 to 15 minutes, until it is very tender (ours is generally done around 12 minutes). Drain the cabbage into a strainer.
  • Place the cabbage in a large bowl with the butter, fresh ground pepper, and kosher salt (around 3/4 teaspoon for a large head of cabbage). Adjust the salt to taste: salt until the flavor pops!

1 large head cabbage, shredded (about 12 cups)
1 onion, chopped
6 tablespoons butter, divided
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
8 ounces Velveeta, cubed
Salt and pepper to taste
1/4 cup dry bread crumbs

Steps:

  • Cook cabbage in boiling water until tender; drain thoroughly. In a large skillet, saute onion in 5 tablespoons butter until tender. Stir in soup. Add cheese; stir until melted. Remove from the heat. Stir in the cabbage, salt and pepper. , Transfer to an ungreased 2-qt. baking dish. In a small skillet, melt remaining butter. Cook and stir crumbs in butter until lightly browned; sprinkle over casserole. , Bake, uncovered, at 350° for 20 to 30 minutes or until heated through.
