How to Make Homemade Fruit Liqueur --- I've come up with a quick and easy technique that results in the most intense fresh fruity flavor, and it's ready to drink in 24 hours --- cheers!

1/2 lb fresh fruit (choose strawberries, apricots, rhubarb, pluots, white peaches, or a fruit of your choice)
1/4 cup granulated sugar
2 1/2 cups vodka (any brand will work)

Steps:

  • Start with clean fruit. Depending on what fruit you are using, hull the berries, pit the stone fruit, or trim rough ends from the rhubarb. Do not peel stone fruit, much flavor and color comes from the skins.
  • Chop the fruit into bite sized pieces and add to a saucepan, along with the sugar. Add 1/4 cup water, and bring to a boil, stirring to dissolve the sugar. If your fruit is dry you may need to add a bit more water. Cook for about 5 minutes, just enough to soften the fruit.
  • Puree the fruit using an immersion blender, a regular blender, or food processor.
  • Add the fruit puree to the vodka and give it a stir. Let sit on the counter, covered, for 24 hours.
  • Strain through a nut bag, or several layers of cheesecloth, squeezing to get all the liquid out. Discard the solids.
  • Keep the liqueur in the refrigerator until needed. Note: these liqueurs need to be refrigerated because of the fresh fruit component, and should be consumed within 2 weeks.

Homemade cordial, also known as squash, syrup or in Scandinavia it's saft, is the perfect way of using a lot of ripe fruit and berries. Using high quality berries or even elderflower and you can get the taste of Summer all year around.

2.2 lb tart-ish berries, 1 kg. Like red currants, blackcurrants, raspberries
water to fill the casserole
2 1/2 - 3 cups sugar, 500-600g
2.2 lb tart-ish berries, 1 kg. Like red currants, blackcurrants, raspberries
2 1/2 cups water, 600ml
2 1/2 - 3 cups sugar, 500-600g
2.2 lb tart-ish berries, 1 kg. Like red currants, blackcurrants, raspberries
20 g citric acid, or 3/4 cup (180ml) lemon juice
2 1/2 cups water, 600ml
5 cups sugar, 1 kg*

Steps:

  • Wash the berries, no need to remove all leaves and vines. Discard rotten and bruised berries.
  • In the casserole that fits the cordial steamer snuggly, fill with water, leaving 2.5in (3cm) at the top. Top with the cordial steamer and pin the tube so the juice doesn't come out.
  • In the cordial steamer, layer berries and sugar. Place the lid on and place something heavy on top. Do not open the lid during the steaming process.
  • How long it will steam depends on your berries, but my red currant cordial needs about 80-90 minutes. It's usually not less than an hour, although raspberries, plums and pears need less, about 45 minutes.
  • When it's done, take the pin off the tube and fill your sterilized glass bottles. Keep in a cool and dark place.
  • Add the washed berries and water to a large casserole. Let it boil (covered with a lid) until the berries are pale and have released most of their juices. Make sure the berries don't break, as this will make your cordial cloudy.
  • Add a damp old kitchen towel or cheesecloth to a large colander and the colander over a new casserole or big bowl. Pour the berry water in. Let this drip for at least one hour, do not help it as this will also make the cordial cloudy.
  • Once it's done, pour the berry water back into a large saucepan along with sugar (and spices if using). Bring this up to a boil, remove foam with a spoon and once the foam is gone, pour into sterilized glass bottles. Keep in a cool and dark place.
  • This method retains the most amount of nutrients in the berries, but it is also the one that keeps the worst. Plus, it needs more sugar to help preserve the cordial.
  • Add washed berries to a blender or mash in a large bowl. You may need some water to help mash it. Pour over water and lemon juice (or citric acid/tartaric acid). Let this mixture sit overnight.
  • Strain it through a sieve covered in a cheesecloth or damp old kitchen towel - remember to keep a bowl underneath. Combine with sugar. Pour into sterilized glass bottles.
  • This will keep for up to 3 weeks in the fridge, but the best way to preserve it is to freeze it! To freeze: pour into smaller bottles, leaving some room as the liquid expands once frozen.
  • When ready to serve, add 1 part cordial with 4 parts water to a glass. You may want more or less water depending on your own preference. Delicious both warm and cold, in a gløgg for Christmas or in this blackberry martini!

Steps:

  • Add all ingredient to a large sauce pan and stir to combine. Bring to a boil over high heat.
  • Once the mixture comes to a boil, continue to boil and stir for 5 minutes. Stir continuously and do not leave the mixture unattended.
  • Next, turn off the heat, but leave the sauce pan on the burner. Allow the mixture to steep and cool for 1 hour.
  • After the hour has passed, pour the mixture through cheesecloth to drain and to remove all of the berry seeds and/or pulp.
  • Transfer to a sterile bottle or jar. Keep refrigerated.
  • To use, pour approximately 1/4 cup of the syrup into a large drinking glass. Add ice and pour in 1 1/2 cups of cold water. Stir and enjoy.

  • Pulse cranberries in a food processor just until roughly chopped; transfer to a clean glass container. Steps:

  • Pour the sugar into a 1 quart jar. Fill the remaining space with berries, but do not pack down. Fill the jar with vodka so that the berries are completely covered. Seal the jar. Let the jar stand for 2 months, shaking the jar every week. The sugar should dissolve, and the vodka will become colored.

½ cup white sugar
2 tablespoons cornstarch

  • Pour frozen berries and 2 cups water into a medium saucepan and cook over medium heat, stirring occasionally, until they have thawed but are not hot. Add sugar and bring to a simmer; cook for about 5 minutes, stirring frequently.

This should be a nice easy project for those willing to wait and enjoy things made by hand. Fruit liqueurs can be used anywhere from beverages to dessert and hopefully it won't become addictive from shear flavor alone. Apricots, blackberries, black currants, blueberries, cherries, cranberries, nectarines, peaches, plums and/or raspberries should be used to give the best liqueur.

1 lb berries or 1 lb fruit, diced
3 cups vodka (80 Proof)
1 1/4 cups granulated sugar

Steps:

  • Rinse the fruit or berries, Fruit must be cut into small pieces.
  • Place berries or fruit in a container, add vodka.
  • Cap and store in a cool, dark place, stir once a week for 2 - 4 weeks.
  • Strain through metal colander. Transfer the unsweetened liqueur to an aging container (glass bottle or container with tight cap). To 3 cups (710) ml unsweetened liqueur add 1 1/4 cup (300 ml) granulated sugar. Let age for at least three months.
  • Pour carefully the clear liqueur to a new bottle. Add more sugar if necessary.
  • The flavor of almost all liqueurs improves during storage. Fruit and berry liqueurs should be stored for at least 6 months for maximum taste. Some lemon liqueurs (e.g. Limoncello) should not be stored for a long time.
