Quick and Easy Pho image

This easy Vietnamese inspired Pho is my quick and easy adaptation that's perfect when you're tight on time. It's made with rice noodles, broth, and choice of chicken, beef, pork or shrimp.

Number Of Ingredients 21

8 oz dried rice vermicelli noodles
Desired meat: chicken, pork, steak or raw shrimp* ((See notes))
1 large yellow onion (, quartered)
2 (2-inch pieces) fresh ginger (, unpeeled and halved, length-wise)
6 cups broth ((chicken, beef or vegetable, depending on protein choice))
2 cups water
1/4 tsp ground coriander
1 whole clove ((optional))
1 1/2 Tablespoons fish sauce ((or less, to taste preference))
¼ teaspoon hoisin sauce
1/4 teaspoon soy sauce
¼ teaspoon red chili paste ((sambal oelek))
1 stick cinnamon
salt and freshly ground black pepper
4 green onions (, chopped)
2 fresh jalapeño peppers or red thai chili peppers (, thinly sliced and seeds removed)
1 bunch fresh cilantro (, chopped)
1 bunch Thai basil leaves
1 cup fresh bean sprouts
2 limes (, cut into wedges)
Sriracha hot sauce, or additional red chili paste (, for heat, optional)

Steps:

  • Place a large dry pot over medium heat add the onion halves and ginger pieces. Cook for 4 minutes, stirring occasionally.
  • Add the broth, water, coriander, clove, fish sauce, hoisin sauce, soy sauce, chili garlic paste, cinnamon stick and a pinch of fresh cracked salt and pepper to the pot. Bring to a slow boil, then reduce heat and simmer for 30 minutes.
  • Meanwhile, prepare noodles according to package instructions. Once soft, drain, rinse and set aside.
  • Ready the garnishes in individual small bowls for serving: cilantro, basil, green onions, bean sprouts, lime wedges and sliced chilies.
  • 1-5 minutes before the broth is done cooking, add desired meat to the broth to cook, just until done (2-3 minutes for raw, thinly sliced chicken or pork, 1-2 minutes for shrimp or thinly sliced steak).
  • Discard the ginger, clove, cinnamon stick and onion pieces from the pot.
  • Divide the noodles among bowls; ladle broth on top (and meat). Add desired toppings.

This authentic pho isn't quick, but it is delicious. The key is in the broth, which gets simmered for at least 6 hours.

4 pounds beef soup bones
1 onion, unpeeled and cut in half
5 slices fresh ginger
1 tablespoon salt
2 pods star anise
2 ½ tablespoons fish sauce
4 quarts water
1 (8 ounce) package dried rice noodles
1 ½ pounds beef top sirloin, thinly sliced
½ cup chopped cilantro
1 tablespoon chopped green onion
1 ½ cups bean sprouts
1 bunch Thai basil
1 lime, cut into 4 wedges
¼ cup hoisin sauce
¼ cup chile-garlic sauce (such as Sriracha®)

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place beef bones on a baking sheet and roast in the preheated oven until browned, about 1 hour.
  • Place onion on a baking sheet and roast in the preheated oven until blackened and soft, about 45 minutes.
  • Place bones, onion, ginger, salt, star anise, and fish sauce in a large stockpot and cover with 4 quarts of water. Bring to a boil and reduce heat to low. Simmer on low for 6 to 10 hours. Strain the broth into a saucepan and set aside.
  • Place rice noodles in large bowl filled with room temperature water and allow to soak for 1 hour. Bring a large pot of water to a boil and after the noodles have soaked, place them in the boiling water for 1 minute. Bring stock to a simmer.
  • Divide noodles among 4 serving bowls; top with sirloin, cilantro, and green onion. Pour hot broth over the top. Stir and let sit until the beef is partially cooked and no longer pink, 1 to 2 minutes. Serve with bean sprouts, Thai basil, lime wedges, hoisin sauce, and chile-garlic sauce on the side.

  • Blanch the bones. This step is SO IMPORTANT. If you want a clear, beautiful pho broth, blanch your bones. Do this by dividing the bones between two large pots or stockpots. Cover with cold water. Bring to a boil over high heat and simmer for 15-20 minutes. Drain and rinse the bones with water.
  • Cook the mirepoix. To a medium stockpot over medium heat, add the olive oil and shallots. Cook the shallots for approximately 5 minutes, stirring often. Add the white parts of a few green onions, the minced garlic, and ginger. Stir well to combine and cook for 1-2 more minutes.
  • Slice your meat. Thinly slice your meat. If you're having trouble, place it in the freezer for 10 minutes which will make it easier to slice.

  • Arrange the larger aromatics on a heat proof baking sheet and blow torch until fragrant. Alternately, toast all aromatics in a cast iron pan on the stove or in the oven broiler for a few minutes until fragrant.
  • Transfer charred aromatics along with sugar and all meats except the sirloin to Instant Pot/Pressure cooker. Fill to the max fill line with water, about 4 quarts. Set pressure to high and cook time to 35 minutes and cook. Quick release the pressure when cooking time is completed. See notes for stovetop instructions.
