Hunan Spicy Ribs Recipe - (4.2/5) image

Number Of Ingredients 25

STOCK:
6 cups Water
3 cloves of garlic Sliced
1 knob of ginger sliced
1 small handful green onion (ends only)
1 stick cinnamon stick
3 star anise
1 1/2 c light soy sauce
1 1/2 c Shoaxing wine (Chinese cooking wine)
75 g Chinese rock sugar
MARINADE/SPICE COATING:
1 tablespoon Shaoxing wine or good medium-dry sherry
1/2 teaspoon salt
1 teaspoon light soy sauce
1 teaspoon dark soy sauce
1 tablespoon potato starch or cornflour
1 3/4 cups peanut oil
2 teaspoons minced ginger
1 tablespoon finely chopped garlic
3 fresh red chilies, seeded and finely chopped
2 to 4 teaspoons dried chili flakes
2 tablespoons cumin seeds
Salt
2 spring onions, green parts only, finely sliced
1 teaspoon sesame oil

Steps:

  • 1. Fill your stockpot with water. Add the stock ingredients together and bring to a boil. Once stock is boiling, turn down the flame to low and add the ribs. 2. Simmer the ribs for 1 - 2 hours, switch off the pot and leave for 30 mins. 3. Transfer ribs to a dish and cool in the fridge. (I left mine in fridge overnight) 4. Remove ribs from the fridge 30 minutes to an hour prior to cooking. 5. In a bowl, mix the wine, salt, soy sauces, flour and one tablespoon water. Add cooled ribs to marinade and let sit for at least 30 minutes. 6. In a wok, heat peanut oil. Add ribs and stir gently for two to three minutes, then remove from oil with tongs and drain ribs well. 7. Pour off all but 3 tablespoons of oil from the wok. 8. Now is where the magic begins, Over a high flame, add the ginger, garlic, fresh chilies, chili flakes and cumin seeds to the work and stir-fry briefly, until spices are fragrant. (DO NOT cook too long or spices will taste burnt!). 9. Return ribs to the wok and stir well, season with salt to taste.

1 tablespoon white wine vinegar
1 teaspoon sesame oil
1 tablespoon honey
1 teaspoon Chinese five-spice powder
½ teaspoon minced garlic

2 pounds pork short spareribs

Steps:

  • Combine soy sauce, white wine vinegar, sesame oil, honey, five-spice powder, garlic, and ginger in a large storage bag. Shake to mix well. Add ribs to marinade; refrigerate 4 to 8 hours, turning bag occasionally.
  • Preheat an oven to 325 degrees F (165 degrees C). Remove ribs from marinade and place in a roasting pan; cover tightly with aluminum foil.
  • Cook ribs for one hour, turning occasionally. Increase oven temperature to 400 degrees F. Remove foil from pan and bake an additional 20 minutes, turning once, until ribs are nicely browned.

2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons chili powder
2 tablespoons paprika
1 tablespoon dry mustard
1 tablespoon salt
2 large racks (4 pounds or more) pork ribs
1/2 cup apple juice
1/2 cup tomato juice
1/2 cup molasses
1/4 cup Worcestershire sauce
1/4 cup hot sauce
1 cup barbecue sauce (your choice)

Steps:

  • A few hours before beginning the slow cooking of the ribs, make the rub by combining garlic powder, onion powder, chili powder, paprika, mustard, and salt in a bowl and mixing well. Rub the mix into the meat and let sit for at least an hour. The mixture will begin to cure the meat.
  • About 30 minutes before beginning to barbecue, heat the grill.
  • Wrap ribs in heavy duty aluminum foil and place on the grill over indirect heat and slowly cook for about 2 hours, turning occasionally.
  • While the ribs are cooking, begin the sauce on the stovetop. Combine apple juice, tomato juice, molasses, Worcestershire sauce, hot sauce and barbecue sauce in a saucepan, stirring to mix well. Simmer over low heat until it beings to thicken. Let simmer for 1/2 hour. Reserve about 1 cup to serve on the side with the ribs, and use the rest to brush on the ribs as they barbecue.
  • When the meat begins to become fork tender, unwrap ribs and begin brushing on the sauce. Continue to apply the sauce to the ribs during the barbeque process. When ribs are able to pull apart, they are ready.

2 tablespoons soy sauce
1 tablespoon dry sherry
1 tablespoon grated fresh ginger
2 large skinless, boneless chicken breasts, cut into bite-sized pieces
6 peppers dried red chile peppers, or more to taste
1 medium shallot
1 medium scallion
1 teaspoon anise seed, or more to taste
½ cup chicken broth
2 tablespoons rice wine vinegar
1 tablespoon white sugar
½ teaspoon salt
4 tablespoons olive oil
1 tablespoon cornstarch

Steps:

  • Whisk soy sauce, sherry, and ginger together in a bowl and pour into a resealable plastic bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, 15 to 20 minutes.
  • While chicken marinates, soak dried chiles in warm water until soft, about 15 minutes.
  • Cut chile peppers, shallot, and scallion diagonally into 1-inch pieces.
  • Grind anise seed into a powder using a mortar and pestle. Transfer to a bowl and add chicken broth, vinegar, sugar, and salt; mix until well combined.
  • Heat olive oil in a skillet over medium to medium-high heat. Add chile peppers and shallot; stir-fry for 30 seconds. Add scallion and stir-fry, 30 seconds more. Add marinade mixture and chicken and stir-fry, 1 to 2 minutes. Pour in chicken broth mixture and mix well.
  • Cook over low heat until chicken pieces are tender, no longer pink in the centers, and juices run clear, about 10 minutes. Stir in cornstarch to thicken sauce; serve with chicken.
