"I LOVE YOU" COOKIES

Steps:

• Beat butter, cream cheese, sugar, vanilla and egg in large bowl with electric mixer on medium speed until light and fluffy. Stir in flour and salt until blended. Cover and refrigerate dough at least 2 hours but no longer than 24 hours.
• Heat oven to 375°F. Roll 1/4 of dough at a time to 1/4-inch thickness on lightly floured cloth-covered board with lightly floured cloth-covered rolling pin. (Keep remaining dough refrigerated until ready to roll.) Cut dough with 3- to 3 1/2-inch heart-shaped cookie cutter. Place about 1 inch apart on ungreased cookie sheet. Carefully insert 1 inch of wooden stick into bottom of each cookie.
• Bake 7 to 10 minutes or until light brown. Carefully remove from cookie sheet to wire rack. Cool completely, about 30 minutes. Spread with frosting; decorate with candies.

Steps:

• Grease a 13x9-in. baking pan. Prepare cake mix batter according to package directions, adding pudding mix, poppy seeds and extract before mixing batter. Transfer to prepared pan. Bake and cool as package directs., Using a fork, poke holes in top of cake. In a small bowl, whisk milk and pudding mix 2 minutes. Pour over cake. Refrigerate until pudding is set, about 20 minutes., For topping, in a large bowl, gently mix whipped topping, pudding mix and milk until blended. Spread over cake; sprinkle with poppy seeds. Refrigerate until serving.

Steps:

• In a medium saucepan, melt the butter over medium heat until melted. Remove from the heat.
• Add the dark brown sugar and granulated sugar and stir until sugars are incorporated and smooth. Chill the mixture for 10 minutes.
• Remove from the refrigerator and stir in the egg, egg yolk, and vanilla.
• Add the flour, oats, baking soda, 1/2 teaspoon salt, and cinnamon and mix together.
• Stir in the white chocolate chips and chocolate chips.
• Roll by hand into 24 medium-size balls or use a scoop, and place on a light-colored cookie sheet.
• Chill for at least 30 minutes.
• Preheat the oven to 325 degrees F. Remove the cookies from the refrigerator and bake for 12 to 14 minutes.
• Melissa's Note: About the name. These cookies are the surefire way to get someone to fall in love with you -- or at the very least gain a serious addiction to cookies. By giving these cookies away, you may need to be prepared for a marriage proposal on the spot. I have been baking since I was a little one. I was the only girl in a house full of brothers (5 to be exact), so I quickly found my spot in the kitchen. My love affair with baking started with cookies and it is how I won dates in high school by delivering them every Sunday night to my "friends." Love would usually ensue. Now I find joy in baking them for my own 4 little ones and they are my ultimate taste testers in the quest for the perfect cookie. They say we got it years ago so it is about time to share it.

I LOVE YOU COOKIES

Steps:

• Mix together the melted butter and egg. Then stir in the muesli, flour, bicarbonate of soda, sugar and milk. Use your hands to make the mixture into a dough. Grease and flour a baking sheet.
• Use a bit of flour to roll out the dough, or if you prefer, roll the dough out between two sheets of baking parchment. Flour the cutters and cut out the letters. For the O, substitute a round cutter and a very small heart cutter, from a set.
• Transfer to the prepared baking sheet and chill for 30 minutes
• Preheat the oven to 180 degrees Celsius/ fan 170 degrees Celsius/ Gas Mark 5. Bake the biscuits for 10 to 12 minutes. Transfer to a rack to cool.
• For the icing, mix together the icing sugar and egg white. Divide this up into 3 bowls, and colour each bowl with your chosen colours. Spoon the icing into your icing bags, and use straightaway or store until ready to use.
• When the biscuits are cool, spread over the base colour. Allow this to dry for 10 minutes, before piping on top of it, otherwise the icing will bleed into each other. Decorate with spots, stripes, squiggles or any other pattern.
• Present to your mum!
