KARIOKA SWEET RICE BALLS



Karioka Sweet Rice Balls image

A Filipino family-favorite! These go fast at family gatherings. Can be served on skewers to prevent sticky fingers!

1 cup rice flour
1 cup shredded coconut
¾ cup coconut milk
2 cups vegetable oil for frying
½ cup coconut milk
¼ cup brown sugar

Steps:

  • Mix rice flour, shredded coconut, and 3/4 cup coconut milk together in a bowl until dough is well mixed. Form dough into balls, about 1 tablespoon per ball.
  • Heat oil in a pot over medium heat.
  • Fry dough balls in the hot oil until lightly browned, about 5 minutes. Remove pot from heat and transfer balls to a paper towel-lined plate.
  • Pour 1/2 cup coconut milk into a saucepan; bring to a boil. Stir brown sugar into hot coconut milk until liquid thickens, 2 to 3 minutes more. Remove saucepan from heat, cool coconut coating slightly, and dip balls into coating. Cool slightly before serving.

mochi flour
1 coconut, grated, place coconut in a large bowl
1 1/2 cups hot water, pour into bowl of coconut
dark brown sugar
1/4 cup cold water

Steps:

  • Squeeze grated coconut in water then strain coconut water in clean dish towel or cheesecloth over another bowl.
  • Squeeze until all liquid has been extracted (Instead of fresh coconut, you may use 1/2 can of grated coconut and 1 1/2 cups of water).
  • Place canned coconut in 1 package of mochi flour and add water until dough is soft but not too sticky.
  • Do the same with fresh coconut.
  • Shape dough in balls of 1 inch diameter and fry in deep fat until golden brown.
  • Drain dough balls on paper towel.
  • Then put them in a large mixing bowl.
  • When all have been fried, boil water and 1/3 box brown sugar in a small sauce pan until it reaches the soft boil stage.
  • This is done by placing a drop of syrup in a bowl of cold water.
  • If it retains it shape and is soft, it is ready.
  • Pour over dough balls.
  • Mix well so that all are coated with syrup.
  • Remove from bowl and place them in a platter to cool.
  • Excellent with coffee or tea.

  • Heat the cooking oil of your choice over medium high heat to 350F. Scoop dough (about 3 tablespoons per ball) and fry until golden brown. ***Be careful as the shell of the cascaron will pop as the dough expands and can splatter oil. I suggest using a splatter guard while frying.
  • While the cascaron are frying you can start the glaze. To a small pot over medium high heat add sugar and water. Heat until sugar melts in to the water and creates a thickened simple syrup. Remove from heat and set aside.
