This delicious Green Chili Pie is quite possibly the easiest dish you will ever make! Not only is it easy, but it only has 3 ingredients! That's right, this isn't a typo, there are only 3 ingredients! And, if this isn't enough to pique your interest, there are really only 3 steps to make it!

1 can chopped green chilies (4 oz can)
4 eggs (well beaten)
10 oz shredded cheddar cheese

Steps:

  • Preheat your oven to 275 degrees.
  • Lightly grease a 9-inch pie pan and spread the chilies evenly over the bottom of the pan.
  • Spread the grated cheese over the chilies.
  • Pour the beaten eggs evenly over the cheese layer.
  • Bake for 1-hour at 275 degrees.
  • Cut into pie shaped or bite size pieces. Serve hot or cold.
  • Enjoy!

2 cans (4 ounce size) chopped green chiles, drained
2 cups milk
4 eggs
4 cups shredded cheddar cheese
1 cup bisquick baking mix

Steps:

  • Sprinkle chiles and cheese in greased 9 inch pie plate. Beat remaining ingredients until smooth; pour over chile mixture. Bake in preheated 425 degrees F oven until knife inserted in center comes out clean, about 25 to 30 minutes. Let stand 10 minutes before cutting. Serve with sour cream or guacamole. Makes its own crust.

I have no idea where I got this recipe, but my girls have loved it forever. It's better the second day, when all the flavors have blended well. If you like cheese and a little bit of Mexican flavor, you'll like this!

12 corn tortillas
2 can(s) cream of chicken soup
2 small cans chopped green chilis
1/2 onion, chopped
2 c monterey jack cheese, shredded
1 c jalapeño cheese, cheese
2 c cheddar cheese, shredded

Steps:

  • 1. If you like spicy food, add the cup (or more) of jalapeño cheese, you can make it has hot as you'd like. I'm not fond of spicy things, so I leave the hot cheese out and substitute it with more Monterey Jack (or anything I've got on hand!).
  • 2. Mix green chilis (do NOT drain), onions and soup together and set aside. Mix all your shredded cheese together and set aside.
  • 3. I use a 2 Qt. deep casserole dish to make this, so I cut my tortillas to fit the dish- so that they make a layer. Hopefully, this will make sense as you start making this dish.
  • 4. Spray Pam on the bottom of the casserole dish. Layer tortillas, soup mixture and a BIG handful of cheese for your first layer. Continue with that layering method, ending with cheese. The more cheese, the better. I use all kinds of cheese. It's a great way to use up all those used packages of shredded cheese.
  • 5. Bake 350, 45 - 60 minutes. It need to be bubbly and golden brown on top. Let set for awhile before eating. Serve with tortilla chips, chopped tomatoes, and chopped lettuce. You may want to fix taco meat and have flour tacos on the side!

1 can (4.5 ounces) Old El Paso™ chopped green chiles, well drained
2 cups shredded Cheddar cheese (8 ounces)
1 teaspoon chopped fresh cilantro
3/4 cup Original Bisquick™ mix
1 1/2 cups milk
3 eggs

Steps:

  • Heat oven to 400°F. Grease 9-inch pie plate. Sprinkle chilies, cheese and cilantro in pie plate.
  • Stir remaining ingredients until blended. Pour into pie plate.
  • Bake 25 to 30 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Serve with salsa if desired.

Instead of stuffing individual chiles for this traditional Mexican dish, just layer canned chiles with cheese and egg and bake.

2 (4-oz.) cans whole green chiles, drained
6 oz. (1 1/2 cups) shredded Mexican cheese blend
3 eggs
3/4 cup Original Bisquick™ mix
1/4 teaspoon garlic powder
1 1/2 cups milk
3/4 cup Old El Paso™ Thick 'n Chunky salsa

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie pan with nonstick cooking spray. Slit chiles lengthwise; remove seeds. Arrange chiles in single layer in bottom and up side of pie pan. Sprinkle 1 cup of the cheese over chiles.
  • Beat eggs in medium bowl with wire whisk. Add baking mix, garlic powder and milk; beat until well blended. Pour over cheese.
  • Bake at 400°F. for 25 to 30 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese. Let stand 5 minutes before serving. Serve with salsa and, if desired, sour cream.

1 lb lean (at least 80%) ground beef
1 can (14.5 oz) whole tomatoes, drained, cut up
1 medium onion, chopped (1/2 cup)
1 package (1 oz) chili seasoning mix
1 can (2 1/4 oz) sliced ripe olives, drained
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick™ mix
1 cup milk
2 eggs
Sour cream, if desired
Shredded lettuce, if desired
Chopped tomatoes, if desired

Steps:

  • Heat oven to 400°F. Spray 9-inch pie plate with cooking spray. In 10-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain. Stir in cut-up tomatoes, onion and chili seasoning mix. Spread in pie plate. Sprinkle with olives and cheese.
  • In medium bowl, stir Bisquick mix, milk and eggs with wire whisk or fork until blended. Pour into pie plate.
  • Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. Serve with sour cream, lettuce and chopped tomatoes.

  • Green pepper rings for garnish, Optional Brown ground beef, onion and green pepper in a skillet on top of the stove. Drain and return to pan. Add drained chili beans, corn, green chilis, pepper, salt, garlic, chili powder, hot sauce and salsa.
  • Mix all ingredients together and heat for about 5 minutes. Spray a 10 inch pie plate or can use a 9 x 9 square baking dish. Pour ingredients into dish and sprinkle 1/2 cup of the shredded cheese on top. Whisk together the bisquick, eggs and milk. Pour over the cheese.
  • Add the remaining cheese and green pepper rings. Bake in preheated 400 degree oven for 25 to 30 minutes. Makes about 8 servings.
