MOIST BANANA NUT BREAD
I got this from a recipe club I was in.It is the only banana bread my family will let me make.We prefer it without nuts,but it is great with chopped pecans for the nut lovers.It is very moist.I keep over-ripe bananas in the freezer,so I can make it at a moments notice.It is a great after-school snack,but it never lasts long at our house!

Steps:
- Combine dry ingredients in large mixing bowl.
- Place butter, eggs, bananas, sour cream, and lemon juice in blender or work bowl of food processor. Whirl until smooth.
- Pour over dry ingredients; add nuts and stir until just moist.
- Pour into greased loaf pan.
- Bake in 350°F oven for 55-65 minutes or until skewer inserted comes out clean.

I found this recipe in a family cookbook, and it's been a favorite ever since. Everyone seems to like it, even those who don't normally care for banana bread.

- Preheat oven to 350°. In a large bowl, combine first six ingredients. In a large bowl, whisk eggs, bananas, oil and vanilla. Stir into dry ingredients just until moistened. Stir in nuts if desired. , Transfer to two greased 8x4-in. loaf pans. Bake 55-65 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks.

DELICIOUSLY MOIST BANANA BREAD RECIPE
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- In a large bowl, mix together the butter and sugar. Add the eggs, vanilla and lemon juice. Mix well. In a separate bowl, combine the flour, baking soda, baking powder and salt. Once fully combined, pour into the butter mixture. Mix until smooth.
- Mash the bananas with a fork or a potato masher. Fold in the sour cream, walnuts and mashed bananas. Spread the mixture evenly into the greased 9x5 inch loaf pan.
- Bake at 350 degrees F (175 degrees C) for 60 minutes (or until a toothpick comes out clean from the center of the loaf).
- Remove from oven and allow the bread to cool in the pan for 10 minutes. Then remove and place on a wire rack to cool completely.

- Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350°F. Grease bottoms only of 2 loaf pans, 8 1/2x4 1/2x2 1/2 inches, or 1 loaf pan, 9x5x3 inches.
- Mix sugar and butter in large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Pour into pans.
- Bake 8-inch loaves about 1 hour, 9-inch loaf about 1 1/4 hours, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

- Heat oven to 350°F. Grease bottom and sides of 13x9-inch pan with shortening or cooking spray.
- In large bowl, stir mashed bananas, granulated sugar, milk, oil, cinnamon and eggs. Stir in 2 2/3 cups Bisquick mix and 3/4 cup walnuts; fold in banana slices. Pour mixture into pan.

- Preheat your oven to 375 degrees F (190 degrees C) and butter your loaf pan on the bottom and all the way up the sides. I like to coat the inside of the buttered loaf pan with sugar, for a slightly crunchy crust, but this is completely optional.
- In a large mixing bowl, or the bowl of your stand mixer, cream the butter and sugar together. Add the banana and mash until it reaches small chunks. Add eggs and combine, then add the milk and vanilla and combine the banana mixture thoroughly.
- Add dry ingredients: baking soda, baking powder, cinnamon and salt. Mix all of the ingredients. Once combined, add the flour to the wet mixture, then mix just enough that the all-purpose flour is fully incorporated. The batter will be lumpy and fairly thick.
- Transfer the batter to your buttered (and sugar-coated, if desired) loaf pan. Bake at 375 degrees F (190 degrees C) for about an hour, or until the topping is golden brown and an inserted knife comes out clean from the center of the loaf. Allow to cool in the pan for about 5 minutes before removing from the loaf pan and transferring to a wire cooling rack to cool completely. Serve warm, if desired.
