INSTANT POT APPLE CRISP
Although you won't get that iconic crispy topping, this pressure cooker apple crisp is packed with so much flavor and really comes together in no-time at all!

- Peel the apples, core them and cut them into a large dice. In a large bowl, combine the diced apples, lemon juice, cinnamon, pumpkin or apple spice, sugar, vanilla, apple juice and cornstarch until evenly mixed. Pour into a 6-quart or larger Instant Pot.
- In the same bowl, make the topping. Combine the flour, brown sugar, salt, cinnamon and oats. Add the butter and rub with your fingers until coarse crumbs form. Pour over the apples in an even layer.
- Lock the lid and set the pressure valve to seal. Cook on high pressure for 1 minute. Quick release the pressure until all the steam has escaped and the lid unlocks. Carefully open the lid and serve the apple crisp with either whipped cream or ice cream.

- Add butter to the bottom of Instant Pot and spread around so it covers the pot. Add in apples, pouring sugar, lemon juice, cinnamon, nutmeg and water overtop.
- In a large bowl, melt butter, then toss with flour and sugar. Stir in oats, then add to layer of apples in the Instant Pot.
- Place lid on Instant Pot and make sure valve is set to seal. Press the pressure cook button and set to high, then pressure cook for 1 minute.

- Remove skins (no more than 1/2 or they'll get mushy) from apples, and but them into THICK cubes or thick slices if you'd rather.
- Put sliced/cubed apples into your Instant Pot (very thick slices, and large cubes). Then add your 1 tsp. cinnamon, a pinch of nutmeg if you would like, vanilla, 1 c. brown sugar, and water into your pot and stir together.
- Put lid on and close steam valve. Set to manual, pressure, high for 0 or 1 minute. If you are unsure if your apples are large enough, or want to ensure they don't get too soft then set to time to 0. This doesn't mean it won't cook, still takes time to pressurize so it will work well. 1 minute if you want it a bit softer.
- While that's cooking mix together your old fashioned oats, 1/4 tsp cinnamon, 3 tbsp melted butter, 1/4 c. flour and 1/2 c brown sugar until combined well.

- To prepare filling: Combine apples, lemon zest, lemon juice, brown sugar, cinnamon and salt in a large bowl. Let stand for 10 minutes.
