Who loves Rice Pudding? If you love rice pudding, then you are going to love this recipe for Instant Pot Rice Pudding. It is easy to make and is so deliciously rich, and creamy.

Steps:
- In pressure cooking pot, combine rice, water, and salt.
- Close the lid and place on High Pressure for 3 minutes. Once complete allow the pressure cooker to do natural pressure release for 10 minutes. After 10 minutes, you can then do a quick release.
- Add 1 1/2 cups milk and sugar to rice in pressure cooking pot and stir until mixed.
- In a small mixing bowl, whisk eggs with remaining 1/2 cup milk and vanilla. Pour through a fine mesh strainer into pressure cooking pot. Select sauté and cook for 8-10 minutes, mixing constantly, until mixture starts to boil. Turn off pressure cooker. Remove pot from the pressure cooker. Stir in raisins.
- Pudding will thicken as it cools.
- Before serving, mix with a scoop of vanilla bean ice cream.
- Serve warm or pour into serving dishes and chill.

- Pressure Cook Brown Rice: Place 1 cup brown rice (200g) and 1 cup cold water (250ml) in Instant Pot. With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position. Pressure cook at High Pressure for 15 minutes (See experiment for your own preference), and Natural Release for 5 minutes, then Quick Release (turn Venting Knob to Venting position). Open the lid carefully.
- Serve: Fluff brown rice with a rice paddle or fork. *Pro Tip: If the rice is a bit wet, let it rest a bit for the moisture to escape before serving.

- Rinse rice until water runs clear. Strain out most of the water and add rice to a multi-functional pressure cooker (such as Instant Pot®). Add milk, water, vanilla extract, cinnamon, and salt and stir well. Close and lock the lid. Select the porridge function according to manufacturer's instructions; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions for 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
- Stir sweetened condensed milk into the rice pudding until combined. Stir in raisins and serve immediately.
