This Instant Pot Korean-Inspired Pulled Pork recipe is a sticky, slightly spicy, flavorful take on pulled pork, made fast in your Instant Pot pressure cooker!

4 pound boneless pork shoulder, trimmed and cut into 4 pieces
4 cloves garlic, minced
¾ cup water
½ cup soy sauce
½ cup gochujang sauce
½ cup brown sugar
2 tablespoons rice vinegar
2 tablespoons sesame oil
1 tablespoon lime zest
1 tablespoon lime juice
2 teaspoons grated ginger
Steamed rice for serving
Optional garnishes: sliced green onions, lime zest, sesame seeds, peanuts, poached egg

Steps:

  • In a medium-sized bowl whisk together the garlic, water, soy sauce, gochujang sauce, brown sugar, rice vinegar, sesame oil, lime zest, lime juice and grated ginger. Set aside.
  • Press sauté button on the Instant Pot. Place pork into the Instant Pot and sear, turning pork every 2 minutes. Pour sauce over the pork in the Instant Pot.
  • Press the manual button on the Instant Pot. Adjust time to 45 minutes. Press the start button and the Instant Pot will start coming to pressure (Will take approximately 10 minutes to get to pressure, and then will start a count down).
  • When the Instant Pot beeps (after the 45 minutes have counted down), allow natural pressure release (this will go faster if you turn the Instant Pot off, but this is not necessary). Natural pressure release will take approximately 30 minutes.
  • Remove pork from the Instant pot and pull with two forks. Add a few tablespoons of sauce to keep pork moist.
  • Press sauté button on Instant Pot. Reduce the sauce to desired thickness (I prefer my sauce thin so it soaks into the rice, but if you prefer your sauce thicker, combine 2 tablespoons of cornstarch with 2 tablespoons of water to make a slurry, and then add to sauce while reducing.)
  • Serve pork over rice and drizzle with sauce. Garnish with options listed above!

The Asian flavors in this pulled pork are a great change from standard BBQ pulled pork. Easy to do in the Instant Pot® or adaptable for a slow cooker. Garnish with toasted sesame seeds. Great over rice, noodles, wrapped in leaf lettuce, or in rice paper wraps.

3 ½ pounds boneless pork shoulder, cut into 1 1/2-inch cubes
1 cup beef broth
1 cup chopped mushrooms
½ cup balsamic vinegar
⅓ cup soy sauce
2 tablespoons honey
2 tablespoons minced garlic
1 tablespoon sesame oil
1 tablespoon minced ginger
2 teaspoons red pepper flakes
1 teaspoon Chinese five-spice powder
2 ½ tablespoons cornstarch
⅛ cup cold water
¼ cup chopped green onions

Steps:

  • Combine pork, beef broth, mushrooms, balsamic vinegar, soy sauce, honey, garlic, sesame oil, ginger, red pepper, and Chinese five-spice powder in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid.
  • Select high pressure according to manufacturer's instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
  • Let sit for 15 minutes before releasing pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Unlock and remove the lid. Remove the pork using a slotted spoon and place in a separate bowl. Set aside.
  • Combine cornstarch and water in a small bowl and add to the pressure cooker. Select Saute function. Bring to a boil and cook until sauce has thickened, about 3 minutes. Select Warm function.
  • Shred the pork using 2 forks to pull apart; mix with sauce. Top with green onions and serve.

Cook until all sides are golden brown, about 10 minutes. You might need to cook the pork in two batches. Add more oil, if needed. Transfer the browned pork to a big plate. Immediately add the water. Use a spatula to scrape off any brown bits stuck to the bottom of the Instant Pot. Turn off Saute function.
  • Transfer the cooked pork back into the Instant Pot. Cover the pot and seal the pressure valve. Use Manual mode on high pressure for 1 hour. Use natural or fast pressure release when done.
