Southern-Style Crowder Peas image

Delicious seasoned peas cooked with onions, peppers, bacon, and ham. A New Orleans style dish. Serve over rice.

4 slices bacon
1 small onion, chopped
1 small green bell pepper, chopped
1 (16 ounce) package frozen crowder peas
2 cups water
1 tablespoon garlic powder
1 pinch dried thyme
1 crushed bay leaf
½ teaspoon seasoned salt to taste
2 slices cooked ham, cubed
1 tablespoon chopped fresh parsley

Steps:

  • Place bacon in a skillet over medium-high heat, and cook until evenly brown. Drain and crumble. Mix onion and green bell pepper into the skillet, and cook until tender. Stir in peas and water. Season with garlic powder, thyme, bay leaf, and seasoned salt. Bring to a boil. Reduce heat to low, and simmer 30 to 40 minutes, until peas are tender.
  • Mix ham into the skillet. Adjust seasonings to taste. Continue cooking 5 minutes. Stir in fresh parsley just before serving.

2-3 cups peas (fresh or frozen)
1/4 cup chopped onion
1 TB extra virgin olive oil
3-4 slices hickory smoked bacon, cut into small pieces
2-3 cups chicken broth
1 bouillon cube (optional but adds more richness)
salt & pepper to taste

Steps:

  • Set Instant Pot on saute.
  • Heat EVOO in the pot along with bacon pieces.
  • When bacon begins to brown, add the onion.
  • Cook until onion begins to caramelize.
  • Add chicken broth and bouillon cube).
  • Fill water to make liquid just above peas.
  • Pressure cook on high for 30 minutes.
  • When pressure cooking stops, allow slow release.
  • Leave peas in IP until time to serve.

  • Turn the Instant Pot on and press the Sauté function key. Add the butter, onions and bacon and sauté for 4-5 minutes. In the meantime, cut away some of the skin from the sausage and squeeze out the ground meat mixture in small chunks.
  • Add the pork sausage, celery and bell pepper and stir through. Add the rest of the ingredients, stir through and press Cancel to stop the Sautéing.
  • Pop and lock the lid and set the Instant Pot to Manual, HIGH pressure, for 10 minutes. After 3 beeps, the Instant Pot will start to build up the pressure and cooking will begin. Once the cooking stops, allow 10 minutes for natural pressure release, then do the quick release and open the lid.
  • Stir in the lemon juice and taste for salt and pepper. You can also add a little cayenne pepper if you like more heat.

  • Place ham, black-eyed peas, broth, water, onion, carrots, bay leaf, and pepper in a programmable pressure multicooker (such as Instant Pot). (Times, instructions, and settings may vary according to cooker brand or model.) Cover cooker with lid, and lock in place. Turn steam release handle to SEALING position. Select MANUAL/PRESSURE COOK setting. Select HIGH pressure for 15 minutes. (It will take 10 to 15 minutes for cooker to come up to pressure before cooking begins.)
  • Let the pressure release naturally for 20 minutes. Carefully turn steam release handle to VENTING position, and let steam fully escape (float valve will drop). (This will take 3 to 5 minutes.) Remove lid from cooker. Remove and discard bay leaf. Garnish with parsley. Serve warm.
