  • First off, never having done a diet, cleanse or reset before, Jimmy and I decided to take on the Whole30. It was a rollercoaster of emotions, which we broke down in our Whole30 Timeline but definitely well worth it now having been through it all. We were set on not having the same boring meal for 30 days straight and had to figure out a way to eat the things we like, in a healthy way of course. There was no way I was going to make it eating chicken breast and steamed veggies every night. Cue baby back ribs. But not just any baby back ribs. We, like many others, ended up buying an Instant Pot on Prime Day and wanted to see what all the fuss was about. Hailing from St. Louis, Jimmy is always in the mood for ribs, but I'm not always in the mood for a meal that is going to take me all day to prep and cook. Enter, the Instant Pot. I'm typically pretty hesitant with anything assuring me of a "quick and easy" yet still delicious meal - I'm old school in the assumption that things need to simmer in the crockpot for half a day to really pull out all the flavor that you want. Also - I was pretty firm on believing that you can't just throw liquid smoke into a dish and call it ribs. I will admit that I still believe that when making real ribs, but come Sunday night and you haven't started meal prepping for the week... this is now my go-to alternative. Be sure you look for a non-sugar/molasses liquid smoke like Lazy Kettle's. Perfect for a last-minute lunch with friends, potluck, dinner, meal prep, it's fantastic as a hearty meal or even just as the protein to top a simple salad. These ribs are the most versatile and truthfully one of the easiest things we've ever made. Sometimes it's easier to use a paper towel to grip the fat/skin as you use a knife to separate it from the meat and bones Rub the ribs front and back with the spice rub. Make sure your Instant Pot has the metal rack inside to allow the juice from the meat to drip off and stay separate (you will use this later to make your BBQ sauce!) Curl the ribs around the instant pot, with the meat side facing out and that the rib bones are facing up. Add the ingredients for the Smoking Liquid to the Instant Pot - try not to let it touch the ribs as it might take off some of the rub. This is where the magic happens. Secure the lid and select the Meat button, set for 25 minutes and when done, let the pressure naturally release for about 10 minutes then quick release the remaining pressure. Remove the ribs carefully with tongs. The ribs are going to be super tender so you will want to do it carefully and keep them flat as you move them to a roasting pan. Take the remaining liquid in the instant pot and mix in a cup of ketchup and allow it to simmer until slightly thick. Pour some of the sauce over the ribs and coat the top evenly. Save the rest of the sauce for dipping or coating your ribs later for a more wet finish. Place it in the oven to high broil for 5-10 minutes until somewhat caramelized but keep an eye on it to ensure it doesn't burn.

Steps:

  • Mix brown sugar, chili powder, parsley, salt, garlic powder, black pepper, cumin, onion powder, and paprika in a bowl using a fork, breaking up any large clumps. Rub spice mixture over both sides of the ribs.
  • Place a steam rack inside a multi-functional pressure cooker (such as Instant Pot®). Pour water and cider vinegar into the bottom of the pot. Lower ribs into the pot by curving them around the edge. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil; place ribs on the foil. Top with barbeque sauce.
  • Broil ribs until sauce is bubbling, about 3 minutes.

Steps:

  • Generously season the ribs with salt and pepper.
  • Pour the apple cider vinegar and 1 ½ cups of water in the base of the Instant Pot.
  • Insert the rack and place ribs on top. Seal lid on top and cook on high pressure for 20 minutes. Allow the Instant Pot to vent for about 10 minutes before removing the ribs from the pot.

Steps:

2 tsp. black pepper
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. all spice
1/2 tsp. chili powder
1/8 tsp. ground cinnamon
2 racks of baby back ribs
1 cup apple cider
1 cup ketchup
1/2 cup dark brown sugar
1/3 cup molasses
1/4 cup apricot preserves
3 Tbsp. Dijon mustard
2 Tbsp. apple cider vinegar
2 Tbsp. vegetable oil
1 tsp. garlic (minced)
2 tsp. chili powder
1/2 tsp. black pepper
1 Tbsp. hot sauce
1/4 tsp. ground cloves
1/4 tsp. ground allspice
1/2 tsp. sea salt

Steps:

  • Add all spices to a small bowl and combine well.
  • Using a knife, remove the silver skin membrane on the bone side of the ribs.
  • Liberally season ribs with seasoning mix on both sides.
  • Add one cup of apple cider to pot, along with trivet. Place both racks of ribs on top of trivet. Lock lid and cook for 22 minutes at high pressure.
  • Once cook time is complete, allow pressure to release naturally (will take about 25 minutes.)
  • Transfer ribs to baking sheet and place under high broiler for 5-7 minutes, until desired char is achieved. Watch closely to prevent burning.
  • In a medium saucepan over medium heat - combine all of the barbecue sauce ingredients, except the salt, and bring to a boil, stirring well. Let cool, then season with salt.
  • Cook the ribs following steps 1 through 5 of the dry rub ribs instructions. Then, transfer ribs to a baking tray and brush sauce all over the bone side. Place ribs under a high broiler for about 5 minutes. Then flip, sauce the meaty side, and broil for a few more minutes.

I love my new Instant Pot ! There are so many things I want to cook in it and the winning choice for tonight was Baby Back Ribs ! So super simple and they turned out really tender and fall off the bone delicious. We did put them under the broiler when they were done because we enjoy the caramelized BBQ sauce. Next time we make them we will pop them onto the BBQ grill for crisping !

Steps:

  • Start with the sauce. This is my recipe and I made a double batch for the ribs. https://www.justapinch.com/recipes/sauce-spread/other-sauce-spread/no-cook-bbq-sauce-by-maggie.html
  • Cut the ribs into sections .. I did 3 or 4 bones per section. Salt and pepper to taste if desired.
  • I sprayed the inside of my pot with cooking spray simply because I am so used to spraying when using a sugary sauce due to it's admirable ability to stick and burn. As it turned out I'm not so sure I needed to do that .. so you choose .. to spray or not to spray !
  • Place the rack inside the instant pot. Lay the ribs on top of the rack. I just laid them kind of sprawled out and overlapping each other.
  • Pour half of the sauce over the ribs. Grab each section of ribs and roll them over in the sauce. Add about 1/3 cup of water to the bottom of the pot.
  • Set the control panel to pressure cook .. set the timer for 22 minutes. Place the lid on and lock in place. Be sure the vent is moved to the seal position.
  • Walk away and let it do it's thing.l
  • When the 22 minutes is up .. leave everything alone for 12 minutes. After that 12 minutes is up, turn the valve to release and when it's done open the lid.
  • At this point you can either serve them as they are .. or you can do as we did and pop them under the broiler for a couple of minutes to caramelize that delicious sauce.
  • You will have diluted sauce in the bottom of the pot and I suggest using that to baste those ribs while they are under the broiler. If you prefer you can use some of the leftover sauce that you made.
  • Serve hot with copious amounts of napkins and wet wipes!
