This is a failproof whole wheat naan recipe without yeast made on a tawa (cast iron griddle). Learn how to make restaurant-style naan at home.

2 Cup whole wheat flour (atta)
1 teaspoon salt
1 teaspoon white granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/3 Cup sour curd or yogurt, at room temperature
1 tablespoon ghee (clarified butter)
2-4 tablespoon lukewarm water
2 tablespoon finely chopped garlic
2 tablespoon finely chopped coriander leaves
1 teaspoon nigella seeds ( kalonji)

Steps:

  • Combine flour along with baking powder, baking soda, salt and sugar in a bowl. Mix nicely. Make a dent in the centre. Pour curd, and ghee in that dent. Mix well and let it rest for 1 - 2 minutes
  • Using one tablespoon lukewarm water at a time form a soft and sticky dough. Knead well for 10 minutes. Naan dough is never dry. It has to be a bit sticky and moist.
  • Grease a bowl with a teaspoon of ghee or oil. Transfer the dough into the ball. Cover with a tight-fitting lid or cling foil. Keep in a warm, draught-free place (I prefer inside the oven/ microwave/instant pot) for 1 - 2 hours.
  • Combine topping ingredients in a bowl and keep near the gas stove. Keep one bowl of clean water next to it.
  • Heat flat cast iron pan/griddle over medium heat. Divide the dough into equal golf ball-sized rounds.
  • Gently flatten the dough ball with the pressure of your palm. Next, dip your fingers in water and gently try to shape the naan. Alternatively, you can dust the rolling surface with flour and roll out naan into an oval-shaped bread of 1/4 inch thickness.
  • Again, using wet fingers stick a teaspoon of chopped toppings over the naan
  • Place the naan on a hot griddle. Cook over medium heat. After a few seconds, naan will puff up and has charred, uneven marks on top
  • Now turn the griddle upside down and cook the other side of bread on direct flame till it becomes light golden in color.
  • If you are not comfortable flipping the pan, simply put the naan on direct flame-like Chapatis and cook until it gets charred marks on top or cook it covered in the cast iron pan itself.
  • Apply some ghee/butter just before serving. Serve Naan warm with any curry of your choice.

This Easy Instant Yeast Free Whole Wheat Naan is basically a simple naan recipe made on tawa with yogurt and some baking soda.

For Yeast Free Instant Naan:
1 cup all-purpose flour
1 cup whole-wheat flour
1 tablespoon oil
1 teaspoon sugar
1 cup natural yogurt
1/4 cup warm milk or water for kneading the dough, use more if needed
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
sesame seeds or nigella seeds for topping
coriander, chopped for topping
melted butter or ghee (clarified butter) for brushing and to drizzle on the top
NOTE: Some ingredients can be replaced with their vegan counterparts.

Steps:

  • Sift the flours in a kneading bowl.
  • Add sugar, salt, baking powder, and baking soda. Mix well.
  • Now pour yogurt and oil right to the bowl.
  • Start mixing together, and add about 1/4 cup of warm milk/water to knead a smooth dough.
  • Once the dough is ready, cover it with a kitchen towel or plastic wrap and keep it aside for 30 minutes.
  • When ready to cook divide the dough into 8 equal balls.
  • Top each dough ball with seeds and cilantro (coriander) leaves. You can also do this after rolling the dough ball. Repeat the same method with the rest the dough.
  • Dust each dough ball with dry flour, flip it, and roll into an oval shape about 1/8 inch thick. Make all the naans in a similar way.
  • Brush both sides of the naan with ghee/butter.
  • Place the naan on the hot pan, and cook for 1 minute, until you see bubbles starting to form.
  • Brush with some ghee. You can also use a lid, to cover the pan.
  • Flip and cook for 1 minute on the other side, until you see the upper side is fully cooked, and dark brown starts to appear.
  • Remove cooked naan from the pan and brush with some more butter, if you want Butter Naan. (You can also rub this naan bread with halved garlic clove, or with melted butter mixed with minced garlic to make it garlic butter naan.)
  • Cook rest of the naans. Once all naans are done, place them in a towel­ lined dish and serve. Serve it hot with some curry on the side.

1 cup whole wheat flour
1 cup processed or all purpose flour ( or maida)
½ cup Greek yogurt (or plant-based yogurt or thick yogurt)
1 tsp. baking powder
½ tsp. sugar
½ tsp. salt
1 tsp. minced garlic (optional)
2 tbsp. vegetable oil
Butter for applying on naan (or olive oil for dairy free)
Warm water to knead the dough
Chopped cilantro (or nigella seeds, minced garlic, fresh herbs like parsley)

Steps:

  • Mix together whole wheat flour, processed flour, salt, sugar and baking powder in a shallow thali or plate.
  • Add ½ cup thick yogurt and knead to a grainy mix. Now add 1.5 tbsp. oil and knead further.
  • Now using warm water little by little make a soft dough. You may use about 1/2 cup of warm water. Make sure it is not hot. Make a ball of dough. Brush with oil and cover with a damp cloth. Keep aside for 30 minutes.
  • After 30 minutes, gently knead the dough again for 30 seconds and form small balls. You will get about 10 naans with this recipe.
  • Now with the help of a rolling pin, roll out each naan in a slightly oval shape using dry flour. You can roll it out to ⅛ inch thickness.
  • Once rolled out, sprinkle some nigella seeds or minced garlic if using and press lightly with rolling pin.

  • Step 3. Knead the dough till it becomes soft and stretchy. To knead the dough I used dough kneader machine so it took 4 minutes to get it ready. By hand it will take around 10 - 12 minutes. Once it is done, let it rest for 15 - 30 minutes.
  • Step 4. When ready to cook, divide the dough into 8 -9 equal balls and press them lightly to make small discs. Take one disc, sprinkle some nigella seeds or sesame seeds on top and start rolling into oval shape. While rolling naan, make sure that you don't press too much else it will not puff very well.
