A simple, delicious cake for you to bake for your family from County Kerry, Ireland. From "The Good Housekeeping International Cookbook Official World Fair Edition (1964)". May be made early in the day or at least 1 1/2 hours before serving.

3/4 cup butter
1/2 cup granulated sugar
3 eggs
1 lemon, rind of, grated
3 medium apples, pared, cored and diced
1 1/2 cups cake flour, sifted
1/4 teaspoon salt
1 1/2 teaspoons baking powder

Steps:

  • Preheat oven to 375°F.
  • In a large bowl, cream butter and sugar.
  • Beat in eggs, one at a time.
  • Stir in lemon rind and diced apples.
  • In a small bowl, sift together flour, salt and baking powder; fold into butter mixture until well blended.
  • Grease an 8x8x2 inch baking dish.
  • Pour batter into prepared baking dish.
  • Bake about 30 minutes or until golden, and cake tester, inserted in center, comes out clean.
  • Cool, cut and serve.
  • Nice served slightly warm with vanilla ice cream.

1 cup butter
2 cups white sugar
6 eggs
3 cups all-purpose flour
2 ½ teaspoons baking powder
1 ½ teaspoons salt
16 ounces maraschino cherries, drained
1 ½ cups raisins
1 tablespoon confectioners' sugar, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter and flour a fluted tube pan (such as Bundt®).
  • Beat butter and sugar together in a large bowl with an electric mixer until light and fluffy. Beat eggs, 1 at a time into the butter mixture.
  • Sift flour, baking powder, and salt together in a bowl. Stir flour mixture into butter mixture until smooth batter forms. Fold in cherries and raisins. Pour batter into prepared fluted tube pan.
  • Bake in the preheated oven until evenly browned, about 1 1/2 hours.
  • Cool cake in the tube pan for 10 minutes before turning out onto a cooling rack to cool completely. Dust with confectioners' sugar.

4 green onions, sliced
1 green pepper, chopped
1/4 cup butter or 1/4 cup margarine
1 cup soft breadcrumbs
1/4 cup fresh parsley, chopped
1 teaspoon lemon juice
1 teaspoon salt
1/4 teaspoon dried basil leaves
4 drawn whole trout (about 8 ounces each)
salt, for rubbing
12 cherry tomatoes (optional garnish)
1 sprig fresh parsley (optional garnish)

Steps:

  • Preheat oven to 350°F.
  • Cook and stir onions and pepper in butter until onions are tender. Remove from heat. Stir in bread crumbs, parsley, lemon juice, salt, and basil.
  • Rub cavities of each with salt. Stuff each fish with about 1/4 cup of the stuffing.
  • Place fish in greased 13x9-inch baking dish. Bake in oven at 350° fpr 30 to 35 minutes, or until fish flakes easily with fork.
  • Garnish with cherry tomatoes and sprigs of fresh parsley, if desired.
