There is absolutely nothing new about coleslaw, but there is something slightly intriguing about coleslaw with mangos. Often, when we think of coleslaw, we think of it as a side for fish and chips, barbecue, or heavy, mayonnaise-drenched cabbage. But just think about the cool, crunchy sweetness of the cabbage, carrots and mango, paired with the spicy kick of jerk chicken. What's a better combination? You also don't have to serve it as a side: It can be tucked into a sandwich or wrap. One of the best things about this recipe is that all the ingredients are readily available, and there are many shortcuts you can take, like using a bagged mix. Who wants to ruin their knuckles on a box grater, or break out the food processor?

- In a large bowl or dish, combine the orange juice, 2 tablespoons oil, jerk seasoning and garlic powder. Flatten chicken breasts to 1/2-in. thickness; add to marinade. Turn to coat; refrigerate for 2 hours. , In a small bowl, whisk the sauce ingredients until blended. Cover and refrigerate until serving., Drain chicken and discard marinade. In a large skillet, cook chicken in remaining oil for 5-6 minutes on each side or until no longer pink., Meanwhile, in a large bowl, combine the mango, spinach and red pepper. MANGO CURRY WITH LENTILS
Super easy and satisfying, this recipe makes a fruity and flavourful curry sauce. Good on top of lentils, rice or chicken or used as an awesome dip for naan bread... enjoy!

Steps:
- Bring water or broth to a boil and then add the lentils. Stir and cover with a lid, reduce to minimum and cook for 25-30 minutes.
- Strain any remaining liquid and set lentils aside.
- Preheat a medium pot on medium heat. Add 1 tablespoon of canola oil and then the onions, peppers and garlic. Sauté until everything is lightly browned.
- Now add the curry powder and sauté for another minute, stirring frequently. This will bring the flavours of the curry powder out a little.
- Add the broth and make sure that you release any brown bits stuck to the bottom of the pot. Now add the apple, mango and coconut milk and stir very well.
- Bring to a boil and reduce heat to low. Simmer sauce for 15 minutes and then puree in a food processor or blender.
- Serve the sauce on top of the lentils with some toasted cashews. Whole wheat naan makes for a nice side.
BBQ JERK CHICKEN WITH CARIBBEAN MANGO SLAW
Steps:
- Combine the jerk seasoning, garlic powder and onion powder in a small bowl. Rub the chicken with the jerk mixture (do not over season, or the dry rub will cake up and become too thick) and marinate, refrigerated, at least 1 hour and up to overnight.
- Combine the mango puree, honey, sriracha, lime juice, beer and some salt and pepper in a small saucepan and heat until the mixture comes to a boil; set aside.
- Preheat a grill or grill pan to medium-high heat. Add the chicken and cook without moving for 3 minutes. Flip over and brush lightly with the mango glaze. Continue cooking until cooked all the way through (to an internal temperature of 165 degrees F), about another 3 minutes. Remove from the grill and brush with more glaze. Tent loosely with foil to keep warm. Serve with Caribbean Mango Slaw.
- Combine the olive oil, honey, vinegar, mustard, sriracha, lime juice and salt and pepper to taste in a large bowl and whisk until well blended. Add the carrots, parsley, mint, cabbage and most of the almonds and mango and toss until well coated. Transfer to a serving bowl and garnish with the remaining almonds and mango.

- Stir together rub ingredients. Rub seasonings all over chicken.
- In a large skillet or pot (one that has a lid) over medium heat, add butter and honey.
- When butter is almost melted, give it a good stir to coat the pan, and add chicken to the pan. Brown 2-3 minutes on each side, then transfer to a plate. (Chicken won't be cooked through at this point)
- Add rice to the pan, stir in coconut milk, water, sugar, and lime juice. Add chicken back to the pan so it is sitting on top of the rice.
- Cover and cook over medium-low heat for 20-25 minutes until liquid is absorbed, rice is tender, and chicken is cooked through. While chicken and rice is cooking, prepare the glaze.
- In a medium sauce pan combine soy sauce, brown sugar, sriracha, and garlic. Bring to a boil over medium heat. Stir together corn starch and water until dissolved, then stir in to sauce pan. Reduce heat to medium-low and stir until glaze thickens.
- Once chicken and rice are cooked, spoon glaze over chicken. Garnish with chopped pineapple, cilantro and lime wedges if desired and serve.

- In your blender or food processor, add the all the paste ingredients except the yogurt.
- Blend ingredients into a paste then add the yogurt and mix well.
- Marinate the chicken in half of the paste and refrigerate for 2 hours.
- Place a large saucepan over high heat and add the oil, cardamom pods and cinnamon sticks. Saute until fragrant
- Add the remaining curry paste and cook out until fragrant, 5-10 minutes.
- Add the coriander, garam masala, onion and garlic and saute for 5 minutes.
- Gently pour in the tomato puree and coconut cream, stir well.
- Bring to the boil before adding the marinated chicken and the mango.
- Drop the heat to a simmer. Simmer the curry uncovered for 15-20 minutes, until the sauce has thickened and the chicken is cooked through.
- Serve with a side of basmati rice.
