HEARTY ITALIAN CHILI
Meet the Cook: Beginning when I was just 5 years old, I was my grandmother's constant helper in the kitchen. And, like her, I can't seem to follow a recipe without changing it! That's how this one came about when I got bored with plain chili. The first time I served it at a potluck, people passed around copies of the recipe. My husband and I have three grown children and three grandchildren. -Chloe Buckner, Edinburg, Pennsylvania

CHEF JOHN'S ITALIAN SAUSAGE CHILI
I've added pork to ground beef in chili before, but I've never tried it with all Italian sausage, and I loved the results. We Italian'd this up even more with cannellini beans and a touch of basil, but other than that, it's a fairly classic chili. Garnish with sour cream, avocado, red onion, and basil.

Steps:
- Heat oil in a large pot over medium-high heat. Cook and stir hot Italian sausage, mild Italian sausage, onion, and a pinch of salt together in the pot, breaking up sausage with a wooden spoon. Cook until sausage is browned and crumbly, and most of the liquid is evaporated, about 10 minutes.
- Stir ancho chile powder, paprika, cumin, ground black pepper, chipotle chile powder, and oregano into sausage mixture; saute until fragrant, about 2 minutes.
- Pour water and tomato puree into sausage mixture, bring to a simmer, reduce heat to medium-low, and cook on a steady simmer until sausage is tender, about 45 minutes. Add water as necessary and skim any fat that floats to the top.
- Stir cannellini beans, red bell pepper, and green bell pepper into sausage mixture. Simmer until vegetables are tender, about 30 minutes. Season with salt to taste.

SLOW COOKER ITALIAN CHILI RECIPE - (4.3/5)

Steps:
- Cook the sausage in a large nonstick skillet over medium-high heat until brown, stirring to crumble. Drain most of the fat, leaving about a tablespoon of fat in the skillet with the sausage. Add diced onion and the next 6 ingredients (onion through salt), and cook for 8 minutes or until vegetables are tender. Add garlic and cook until fragrant, about 1 minute. Place meat mixture in an electric slow cooker; stir in beans, tomatoes, tomato paste, and red wine. Cover with lid, and cook on low heat setting for 4 hours. After 4 hours, add pasta to slow cooker and stir until all pasta is submerged in liquid; turn heat to high and cook for 15 - 20 minutes or until pasta is al dente. Stir in 3 tablespoons chopped parsley. Scoop into bowls and top with additional fresh parsley if desired. NOTE: The chili can be made on the stovetop if you don't have a slow cooker. Instead of transferring mixture to slow cooker, leave on stovetop and bring to a boil. Reduce heat; simmer, partially covered, 1½ hours. Then, bring back to a boil and stir in pasta; cook until pasta is al dente, about 10 minutes.

ITALIAN CASSOULET (ITALIAN CHILI)
I have been "evolving" this recipe for a couple of years as an alternative to the standard (mostly boring) chili that gets presented in the yearly cookoff. This IS NOT FOR THE FAINT OF HEART!!!!! Nevertheless, it is eminently edible in this configuration. I'm still developing it (sliced mushrooms added last time, OK, but just cluttered up the effect.) Next time maybe I'll chunk the onion instead of dice, or substitute eggplant for some of the bell pepper. You will notice there is neither salt nor pepper in this recipe - you won't need any!

Steps:
- Simmer beans about an hour to an hour and a half in plenty of water until almost done. You don't want the beans disintegrating during the next stage of cooking.
- Drain and set aside.
- Add olive oil to large, heavy pot.
- Cook sausage, pepper, onions and coarse garlic until sausage is no longer pink, stirring to break up meat into chunks, about 3/8" or so.
- Add tomatoes, minced garlic, beans, broth, habaneros and rosemary.
- Bring to simmer, cover and simmer an hour or so - until beans are done and rosemary has absorbed enough liquid to be comfortably edible.
- Refrigerate for one day.
- Then reheat amounts as needed and serve with Pugliese and a fine Chianti.
- Makes about a gallon.
