ITALIAN SAUSAGE AND PEPPERS ON TOASTED GARLIC BUNS

- Poke the sausages all over with a fork.
- In a large, deep, heavy skillet, pour in the extra virgin olive oil, heat on medium heat.
- Place the sausages in and cook until fairly brown.
- Add the garlic to the sausages when they are not fully cooked, but fairly golden brown, so that the garlic does not burn from cooking too long.
- Place the sausages into a large (13 x 9?) baking dish, draining the oil to stay in the skillet.
- Place the sausages in a pre-heated 400 degree oven to stay warm while cooking the peppers and onions.
- Add the sliced onions to the hot left-over olive oil in the skillet.
- Cook onions until browned and caramelized, but still crunchy, 6 minutes.
- Add mushrooms to the cooked onions until browned and caramelized, 6 minutes.
- Add the cooked onions and mushrooms to the sausages in the oven, draining the oil from them to be left in the skillet to saute' the peppers.
- Add more olive oil to the pan if there is not enough.
- Add all of the peppers and saute' 6 minutes; keep them at a nice level of crunchiness, not wilted or soft.
- Remove the sausages, onion, and mushrooms from the oven.
- Add the peppers to the sausage, onions, and mushrooms to the sausage mixture.
- Add the oregano, basil and red pepper flakes; blend well
- Add tomato sauce and wine at this point and carefully blend together.
- Salt and pepper to taste.
- Return to the 400 degree oven and bake uncovered for 20 minutes.
- While baking, melt a stick of butter.
- Add garlic powder to the melted butter to your preference level, about a Tablespoon.
- Blend well.
- With a pastry brush, thoroughly and heavily brush on the garlic butter on both sides of the hoagie/submarine buns.
- After the sausage, peppers, and onions are done baking, turn on the BROILER.
- Place the buns under the broiler for about 2 - 3 minutes and watch them so they do not burn!
- When golden brown, remove from the oven.
- Place a sausage on each bun and smother with the peppers, mushrooms, and onions!

My family has been using this very simple and delicious recipe for sausage, peppers, and onions for years and years now. For an extra kick, try using half sweet sausage and half hot sausage!

- Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.
- Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.
- Return sausage slices to skillet with the vegetables. Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.

- Add oil to a large skillet over high heat.
- Brown the sausages well on all sides, I like to get a good amount of color on them. Color=flavor!
- Remove the sausages to a platter and set aside.
- Add the bell peppers and onions to the same skillet and cook for about 5 minutes, getting them a little bit brown as well.
- Reduce the heat to medium and add the garlic to the veggie mixture for the last minute.
- Next add the sausages back to the pan and dump in the tomato sauce and diced tomatoes with juice, the salt, Italian seasoning, onion powder and brown sugar.
- Bring to a boil then reduce to low and simmer covered for an hour or until sausages are cooked through.
- When you are ready to serve, toast your hoagie buns on both sides, then add the cheese to the inside of the buns and place back in the oven to broil until the cheese is melted.
- Add the Italian Sausage & peppers & onions to each hoagie and sprinkle with lots of Parmesan cheese. Serve with some of the tomato sauce on the side for dipping.
- My kiddos like their sausages cut up in bite size pieces before I put it on their hoagies, but that is optional.
EASY ITALIAN SAUSAGE, PEPPERS AND ONIONS FOR A CROWD OR A FEW
When my children are home for the summer they always ask for grilled foods and Italian sausage subs are a great meal for dinners or lunch. Well making 6-8 is easy enough on the grill but then all the friends are here (LOVE THAT) so I need to make enough for 20-30. Came up with this easy way to do sausage and they do taste great.

Steps:
- put italian sausage ropes in roasting pan large enough to fit amount you are making.
- quarter onions and put on top.
- cut green peppers into strips and throw on top.
- add water.
- cover pan with heavy duty foil and bake for 2 hours at 300 degrees (time varies depending on amount of sausage).
- once done, cut into roll length pieces.
- ***OPTIONAL-at this point I have thrown on a hot grill to put grill marks and sear skins.
- put on nice hoagie rolls, cover with peppers and onions
- (optional)add provolone or mozzerella cheese get a good napkin and enjoy!
- NOTES- easily reduces.
- sausage freezes and reheats well.
- onions and peppers are done fresh.

- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Once pot is hot, add oil, green and red bell peppers, and onion. Cook until vegetables are tender, about 5 minutes. Lightly prick sausage casings with a fork and add to pot. Brown sausages on all sides, about 5 minutes. Add tomato sauce, garlic, Italian seasoning, and salt. Close and lock the lid.
- Turn off Saute function and select high pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Cut sausages on the diagonal into small pieces. Serve immediately.

- Heat large nonstick skillet on medium-high heat. Add sausages; cook 12 minute or until cooked through (170ºF), turning after 6 minute.You can also BBQ the sausages.
- Remove sausages from skillet; cover to keep warm. Drain skillet.
- Add peppers, onions,garlic and dressing to skillet; cook and stir 5 minute or until vegetables are crisp-tender.
- Stir in tomatoes. Bring to boil; cook 5 min., stirring occasionally.
- Cut sausages lengthwise in half, being careful to not cut all of the way through to bottom of each sausage.
- Open sausages; place, cut-sides down, on bottom halves of rolls.
- Top evenly with pepper mixture and cheese. Cover with top halves of rolls.
