We like pasta with Italian tomato sauces, and this recipe is one we make often. It's heavy on the shrimp and light on the pasta, and that's the way we like it...we can remember when shrimp was unheard of in our budget, so I guess we're making up for it now!

- In a large skillet, saute garlic in oil for 1 minute or until crisp-tender. Add the tomatoes, broth, basil, oregano and pepper. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 15 minutes. , Meanwhile, cook pasta according to package directions. Add the shrimp to the tomato mixture; cook for 5-6 minutes or until shrimp turn pink. - Combine tomatoes, basil, olive oil, garlic, Italian seasoning and salt in a large bowl and blend thoroughly. Cover, set aside and marinate for at least 1 hour.
- Heat a large, nonstick skillet over medium heat. Add butter and let melt. Stir in white wine and bring to a boil. Add heavy cream and Parmesan cheese and bring to a simmer. Let sauce reduce to desired consistency.
- Add cooked, drained pasta and marinated tomatoes to skillet. Stir to thoroughly coat pasta with sauce.
- Transfer pasta and sauce to serving platter and top with mozzarella cheese.
- Grill or sauté shrimp until internal temperature reaches 150°F and set aside.
- Place serving platter in broiler for 2-3 minutes, or until cheese has melted.
- Top pasta with cooked shrimp and serve.

- *I grill my shrimp, but you may broil or boil. You can even use pre-cooked (I don't recommend it though. Grilling and broiling produce superior flavor. I used large (21-25 ct/lb) shrimp. I generally will grill them while the sauce is reducing and the pasta is cooking, but whatever method is best for you is the key.
- For Marinated Tomatoes--remove pulp and seeds from tomatoes and roughly dice. Place in a small bowl and add the remaining ingredients; stir. Cover and refrigerate at least 1 hour.
