2 lbs dried brazilian black beans, picked through and soaked overnight in water
2 large onions, minced
vegetable oil
1 head garlic, minced
bay leaf
1 lb smoked pork neck bones, cut into chunks
8 ounces beef brisket, cut into chunks
4 slices smoked rib bacon, cut into chunks
4 fresh cut into individual ribs or 4 smoked pork ribs, cut into individual ribs
2 smoked ham hocks
2 smoked pigs tail
1 fully cooked smoked brazilian beef sausage, sliced (Calabresa)
1 large smoked sausage, sliced
vegetable oil
salt
2 bunches collard greens, stems removed, thinly sliced
white rice, for serving
orange, peeled and sliced, for serving
spicy brazilian hot sauce, for serving
toasted manioc flour, for serving (farofa)

Steps:

  • For the beans:.
  • Drain the beans and transfer to a very large pot. Cover with fresh water. Bring to a boil, and then reduce the heat to maintain a low simmer for about 1 hour. Meanwhile, saute the onions in vegetable oil in a skillet over medium heat, stirring occasionally, until soft, 8 to 10 minutes. Add the garlic and cook another minute and set aside. After the beans have cooked for 1 hour, stir the onions, garlic and bay leaves into the beans. Cook for 1 hour longer, adding more water if necessary to keep the beans covered.
  • For the meat:.
  • While the beans are cooking, preheat the oven to 350 degrees F. Arrange the neck bones, brisket, bacon, ribs, ham hocks, pig tails and sausages in enough roasting pans or baking sheets to contain them in one layer, and roast for 1 hour 30 minutes to 2 hours.
  • Add all of the meat, without their rendered fat, to the pot of beans and mix well. Add enough water to cover. Bring to a boil, and then reduce the heat and simmer until the beans are soft and the meat is tender and falling apart, 2 hours to 2 hours 30 minutes.
  • For the collard greens:.
  • Just before serving the feijoada, heat oil in a large nonstick skillet over medium-high heat. Add salt to the pan, and then add the collards in handfuls, letting the greens wilt a little before adding more. Saute until crisp tender.
  • Serve the feijoada with the collard greens, rice, orange slices and hot sauce, sprinkling the farofa over the feijoada.

A co-worker's mom used to make this dish for him and it was his favorite. So I made him my own version. Instead of sausage you can use ham hocks, or substitute lean white meat for the red meat if you prefer. -Christiane Counts, Webster, Texas

8 ounces dried black beans (about 1 cup)
2 pounds boneless pork shoulder butt roast, trimmed and cut into 1-inch cubes
3 bone-in beef short ribs (about 1-1/2 pounds)
4 bacon strips, cooked and crumbled
1-1/4 cups diced onion
3 garlic cloves, minced
1 bay leaf
3/4 teaspoon salt
3/4 teaspoon pepper
1-1/2 cups chicken broth
1 cup water
1/2 cup beef broth
8 ounces smoked sausage, cut into 1/2-inch slices
Orange sections
Hot cooked rice, optional

Steps:

  • Rinse and sort beans; soak according to package directions. Meanwhile, place pork roast, short ribs and bacon in a 6-qt. slow cooker. Add onion, garlic, bay leaf and seasonings; pour chicken broth, water and beef broth over meat. Cook, covered, on high 2 hours. , Stir in beans and sausage. Cook, covered, on low 5-6 hours, until meat and beans are tender. Discard bay leaf. Remove short ribs. When cool enough to handle, remove meat from bones; discard bones. Shred meat with 2 forks; return to slow cooker. Top servings with orange sections. If desired, serve with hot cooked rice.

1 medium Roma tomato
6 peppers de arbol chile peppers
5 peppers guajillo chile peppers
1 medium morita chile pepper
1 pasilla chile pepper
2 cups vegetable broth
½ small white onion, chopped
1 clove garlic, minced
½ teaspoon vegetable base
½ teaspoon cider vinegar
salt to taste
1 tablespoon peanut oil
2 tablespoons peanut oil, or more as needed
1 large white onion, chopped
1 medium red bell pepper, chopped
1 large portobello mushroom, chopped
½ teaspoon tamari
¼ teaspoon liquid smoke flavoring
2 (14 ounce) cans jackfruit, drained
1 teaspoon pollo asada seasoning
1 teaspoon ground paprika
1 teaspoon ground cumin
½ teaspoon sazon seasoning (such as Goya®)
½ teaspoon seafood seasoning (such as Old Bay®)
½ teaspoon garlic powder
salt to taste
12 (6 inch) corn tortillas
½ cup shredded vegan cheese, or to taste

Steps:

  • Roast Roma tomato over a gas burner. Core tomato and cut into 8 pieces; set aside.
  • Remove stems and seeds from all chile peppers. Mince peppers and place in a large skillet over medium heat. Cook until warmed, 2 to 3 minutes. Add vegetable broth, reduce heat to low, and cook for 30 minutes.
  • Use a slotted spoon to transfer peppers to a blender. Add fire-roasted tomato, onion, garlic, vegetable base, cider vinegar, salt, and a small amount of broth to the blender. Pulse, adding more broth as necessary, to desired consistency. Reserve remaining broth for the filling.
  • Heat 1 teaspoon peanut oil in a skillet over medium heat. Add sauce and simmer for 10 minutes.
  • Meanwhile, heat 1 tablespoon oil for filling in a skillet over medium heat. Add onion and bell pepper and cook until soft, about 5 minutes. Remove to a bowl. Add mushroom to the skillet, adding more oil if necessary; cook and stir until juicy and tender, about 5 minutes. Add tamari and liquid smoke, then remove and add to the onion mixture.
  • Add more oil to the skillet. Add jackfruit, pollo asada seasoning, paprika, cumin, sazon seasoning, seafood seasoning, garlic powder, and salt. Cook and stir, shredding the jackfruit as it cooks, until golden brown, 5 to 8 minutes. Add onion mixture along with some reserved broth. Reduce heat to low, cover, and steam for 10 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Meanwhile, brush tortillas with more peanut oil and fry in a skillet.
  • Stuff each tortilla with filling and roll up. Place in a 9x13-inch casserole dish. Top with some sauce, reserving some for serving. Sprinkle with vegan cheese.
  • Bake in the preheated oven for 15 minutes. Turn on the broiler and broil until cheese is melted, about 3 minutes. Top with remaining sauce.
