RICE WITH GREEN PEPPER AND JALAPENO



Rice with Green Pepper and Jalapeno image

Number Of Ingredients 9

2 tablespoons butter
1 jalapeno pepper, seeded and minced
1/2 yellow onion, finely chopped
1/2 green bell pepper, chopped
Kosher salt
1 clove garlic, minced
1 1/2 cups white rice, uncooked
1/2 cup chicken stock
Zest and juice of 1 lime

Steps:

  • Melt the butter in a large sauce pan. Then add the jalapeno, onions and green peppers, sprinkle with salt and cook over medium heat until tender, about 5 minutes. Add the garlic and stir. Add the rice and cook over medium-high heat, stirring frequently, until the rice is golden, about 5 minutes. Turn the heat up to high and add 2 cups water and the stock. Bring to a boil, cover tightly, and reduce the heat to a simmer for 20 minutes. Remove from the heat and let rest, still covered, 3 minutes longer. Sprinkle with the lime zest and juice before serving.

1 tablespoon butter
1 cup long-grain white rice
1 teaspoon lime zest
2 tablespoons fresh lime juice
½ cup chopped cilantro

Steps:

  • Bring the water to a boil; stir the butter and rice into the water. Cover, reduce heat to low, and simmer until the rice is tender, about 20 minutes.
  • Stir the lime zest, lime juice, and cilantro into the cooked rice just before serving.

8 ounces sour cream
1 (4 ounce) can chopped jalapeno peppers, drained
8 ounces monterey jack cheese, grated

Steps:

  • Preheat the oven to 350º.
  • Mix the rice, sour cream, and jalapenos in a large bowl.
  • In a 1 quart casserole dish, layer half of the rice mixture and then half of the cheese.
  • Repeat, ending with a layer of cheese.
  • Bake, covered, for 30 minutes; then remove the cover and bake for another 10 minutes.

1 teaspoon olive oil
1 garlic clove, minced
1 cup finely chopped yellow onion
3 cups low sodium chicken broth
1 medium jalapeno pepper, stemmed, seeded and minced
1 medium yellow bell pepper, stemmed, seeded and finely chopped
1 cup butternut squash or 1 cup other winter squash, cut into 1/2 inch cubes
1 medium tomatoes, cored, peeled and coarsely chopped
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
1 1/2 cups basmati rice or 1 1/2 cups jasmine rice
1 tablespoon toasted pine nuts or 1 tablespoon slivered almonds
4 tablespoons finely minced fresh parsley
3 tablespoons lime juice

Steps:

  • In a large (10- to 12-inch) nonstick skillet, heat olive oil over medium heat.
  • Add garlic, onion and 1 tablespoon broth.
  • Sauté 4 minutes.
  • Add jalapeño and bell pepper; sauté 4 minutes.
  • Put squash, tomato, cumin, chili powder and salt into the pan, stirring well.
  • Cover and cook 5 minutes.
  • Then add rice and stir well to coat.
  • Add remaining broth and bring to a boil, stirring well.
  • Cover, reduce heat to low and cook 15 minutes.
  • Stir, cover and continue cooking 5 minutes.
  • Stir pine nuts, parsley and lime juice into the rice.
  • Cover and let sit off the heat 5- 10 minutes before serving.
