Jamaican-Inspired Rice and Red Beans image

This is a shortcut and slightly Americanized version of Jamaican rice and red beans, a traditional favorite, simply called "rice and peas" in the island nation.

1 tablespoon olive oil
1 large onion, finely chopped
3 cloves garlic, minced
3 1/2 to 4 cups cooked brown rice, any variety (see note)
3 to 4 cups cooked small red beans or two 15-ounce cans, drained and rinsed
15-ounce can light coconut milk
1 teaspoon curry powder
1/2 teaspoon dried thyme (or 1 1/2 teaspoons fresh leaves)
2 scallions, thinly sliced
1/4 cup chopped fresh parsley or cilantro, optional
Salt and freshly ground pepper to taste

Steps:

  • Heat the oil in a small soup pot or steep-sided stir-fry pan. Add the onion and sauté over medium-low heat until translucent. Add the garlic and continue to sauté until the onion is golden.
  • Add the rice, beans, coconut milk, curry, and thyme. Bring to a simmer, then cover and cook over low heat for 10 to 15 minutes, or until most of the coconut milk is absorbed. The mixture should be moist but not soupy.
  • Stir in the scallions and optional parsley or cilantro. Season with salt and pepper, and serve.

1 (16-ounce) package dried red kidney beans
10 cups, plus 4 cups water
3 cloves crushed garlic
1 coconut
3 scallions, sliced
1 tablespoon salt
1/4 pound butter
4 cups uncooked rice (recommended: Uncle Ben's Converted Rice)

Steps:

  • Bring beans, 10 cups water, and garlic to boil at high heat. Simmer for about 1 hour or until beans are soft.
  • Crack coconut, remove shell, and cut meat into small pieces. Put half of the coconut into blender with 2 cups water and puree. Repeat for remaining coconut. Strain the coconut through a strainer squeezing the milk out of the coconut (you will end up with approximately 3 cups of coconut milk).
  • Add coconut milk, scallions, salt, and butter to the beans and bring to a boil. Then add rice and stir with a fork. Turn to low heat and cook for 30 minutes or until water is cooked out. Be sure not to stir the rice until water is gone.

½ tsp unsalted butter
½ onion, (diced)
1 garlic clove, (minced)
1 c rice, (dry)
1 bay leaf
½ tsp thyme
½ tsp ground black pepper
1 c water
½ c coconut milk ((canned))
½ c cooked red beans ((kidney beans or pigeon peas))
½ tsp salt

Steps:

  • Heat butter in a medium saucepan. Add onion and garlic, and sauté 1-2 minutes over medium heat.
  • Add rice, bay, thyme, pepper, water, and coconut milk. Bring the mixture to a boil, reduce the heat and simmer, covered, 10 minutes.
  • Add the beans and continue to cook, covered, until all the liquid is absorbed and the rice is tender, 8-10 minutes.
  • Remove the bay leaf and mix in the salt. Let the rice stand, covered, for 5 minutes to finish steaming.
  • Taste the rice and adjust the salt and pepper as desired.

1 pound smoked sausage, sliced
1 onion, chopped, divided
1 green bell pepper, chopped, divided
1 jalapeno pepper, finely diced, divided
2 cups water
2 cubes chicken bouillon
1 tablespoon salt-free garlic and herb seasoning (such as Mrs. Dash®)
1 tablespoon Cajun seasoning blend
1 teaspoon red pepper flakes
1 bay leaf
3 (16 ounce) cans kidney beans, drained and rinsed
1 (14.5 ounce) can diced tomatoes
salt to taste
3 cups cooked white rice

Steps:

  • Combine sausage, half the onion, half the green bell pepper, half the jalapeno pepper, water, chicken bouillon, garlic and herb seasoning, Cajun seasoning blend, red pepper flakes, and bay leaf in a large stockpot; Bring to boil and cook, stirring occasionally, until liquid is reduced by half, 15 to 20 minutes.
  • Mix kidney beans, tomatoes, remaining onion, remaining green bell pepper, and remaining jalapeno pepper into the sausage mixture; season with salt. Bring to a boil, reduce heat, and simmer until kidney bean mixture is thickened, 15 to 20 minutes. Remove and discard bay leaf.
  • Spoon 1/2 cup cooked rice into 6 serving bowls; top with kidney bean mixture.

This is a yummy recipe that can be used as either a side dish or a great vegetarian main dish! And with the warm weather finally here I've been experimenting with Island recipes, Jamaican being some of my favorite "flavors". My fiancee' went wild over this with Grilled Jerk Chicken made from the authentic Jamaican Jerk Sauce recipe. I hope you enjoy it as much as we did. (p.s. I've done this the long way and the short-cut method and while the taste is slightly different both are VERY good) Work time includes soaking of beans.

1 1/2 cups dried kidney beans (light or dark)
2 teaspoons salt
1 garlic clove, crushed
1/2 cup unsweetened coconut milk
2 scallions, chopped
2 tablespoons vegetable oil
2 sprigs fresh thyme
1 1/2 teaspoons ground allspice
1 whole jalapeno pepper
1 bell pepper, chopped
2 medium yams, peeled and diced
4 cups cooked long-grain rice
salt and black pepper

Steps:

  • In a large pot, heat about 8-10 cups of water to boiling (enough water to cover beans by about 1 inch). Add dry beans and boil 2 to 3 minutes. Remove pot from heat, cover and let stand about 4 hours or overnight. Drain the beans thoroughly and rise.
  • Add enough fresh water to just cover beans, add garlic and salt, stir. Simmer about 30 minutes until they begin to get tender (not cooked through). Save 3 cups liquid, discard remaining liquid and garlic clove.
  • In the pot sautee yams, allspice, scallions and peppers in oil until the scallions begin to soften. (2-3 minutes)
  • Return the beans and add the reserved liquid to the pot with the coconut milk and simmer about another 10-20 minutes stirring occasionally until the beans are soft and yams are cooked thoroughly. Serve over cooked rice in individual bowls.
  • Shortcut method: drain and risne two (2) 12oz. cans of light or dark kidney beans. Skip to sautéing the vegetables and spices (add garlic to the sautee' pot) When they are soft add the drained/rinsed beans and about 1-1/2 cups of water and continue with recipe from there.
