BEET BURGER WITH CITRUS-CAPER AIOLI



Beet Burger with Citrus-Caper Aioli image

Number Of Ingredients 17

4 tablespoons grapeseed oil
1 medium yellow onion, minced
Kosher salt and freshly cracked black pepper
Kosher salt and freshly cracked black pepper
2 cups cooked brown rice, cooled (a microwaveable bag works great)
1 cup roughly chopped, peeled raw red beets (about 1 large beet)
1 cup walnuts
1/2 cup yellow raisins
1/2 teaspoon granulated garlic
2 large eggs
Bibb lettuce leaves, for serving
Citrus-Caper Aioli, recipe follows
1/2 cup mayonnaise
2 tablespoon capers
1 tablespoon honey mustard
1 teaspoon orange zest plus 2 tablespoons fresh orange juice
Kosher salt and freshly ground black pepper, optional

Steps:

  • Heat a skillet over medium heat and add 2 tablespoons of the oil. Add the onions, season with salt and pepper and saute until slightly golden, about 10 minutes. Set aside to cool.
  • Add the brown rice, beets, walnuts, yellow raisins, granulated garlic and cooled onions to a food processor and pulse about 10 times, until the mixture is ground similar to ground beef. Transfer to a bowl and add the eggs, 1 teaspoon salt and some pepper. Mix by hand until uniform, then tightly form into 4 patties.
  • Heat a nonstick skillet over medium-high heat and add the remaining 2 tablespoons oil. Season both sides of the patties with salt and pepper. Gently add the patties to the oil and sear on each side until crisp and browned, about 10 minutes a side.
  • Place the patties on 2 to 3 Bibb lettuce leaves. Dollop a bit of Citrus-Caper Aioli on top and serve.
  • Mix the mayonnaise, capers, honey mustard and orange zest and juice in a bowl. Adjust the seasoning if necessary with salt and pepper.

1 pound ground beef (preferably 80% lean)
1 teaspoon canola oil
1 teaspoon kosher salt, divided
1/2 teaspoon coarsely ground pepper, divided
4 hamburger buns, split
Optional: Mayonnaise, sliced American cheese, sliced tomato, dill pickle slices, lettuce, ketchup and yellow mustard

Steps:

  • Place a 9-in. cast-iron skillet over medium heat. Meanwhile, gently shape beef into 4 balls, shaping just enough to keep together (do not compact). , Increase burner temperature to medium-high; add oil. Working in batches, add beef. With a heavy metal spatula, flatten to 1/4- to 1/2-in. thickness; sprinkle each with 1/8 teaspoon salt and pepper. Cook until edges start to brown, about 1-1/2 minutes. Turn burgers and sprinkle with additional 1/8 teaspoon salt and pepper. Cook until well browned and a thermometer reads at least 160°, 1 minute. Repeat with remaining beef., Serve burgers on buns with toppings as desired.

Jeffrey Dean Morgan (Denny from Grey's Anatomy) is a fantastic cook and was on Rachael Ray's show. He talked about a pinwheel steak that he makes and RR invented a burger version! This is my take on it using ground turkey and turkey bacon It's delicious!

1 lb ground turkey
1 small red onion (chopped finely)
8 slices turkey bacon
4 spinach leaves
1 teaspoon ground cumin
1/2 teaspoon chili powder
1 (8 ounce) can tomato sauce
3 garlic cloves (minced)
1/4 cup brown sugar
4 slices provolone cheese
4 kaiser rolls

Steps:

  • Add cumin, chili powder, garlic to ground turkey. Mix and put in fridge.
  • In a small pan, cook the bacon and set aside. In the same pan add onion and cook until translucent, then add brown sugar. When the brown sugar is caramelized over the onions add tomato sauce and simmer on low heat until thickens up.
  • In a larger pan, form the ground turkey into patties and cook until done all the way through.
  • Wilt spinach leaves in the large pan after the burgers are done (only takes a few seconds).
  • Toast kaiser rolls.
  • Build the burgers like this. Bottom bun, burger, cheese, bacon, sauce, spinach leaf, top bun.
