Ingredients

8 roma (plum) tomatoes, seeded and diced
6 serrano chile peppers, diced
2 jalapeno peppers, seeded and diced
½ small white onion, diced
3 cloves garlic, minced
2 tablespoons chopped fresh cilantro
¼ teaspoon chili powder
¼ teaspoon grated lime zest
1 lime, juiced
coarse salt and ground black pepper to taste

Steps:

Toss tomatoes, serrano peppers, jalapeno peppers, white onion, garlic, cilantro, chili powder, lime zest, and lime juice in a bowl; season with salt and black pepper. Cover the bowl with plastic wrap and refrigerate 1 hour to overnight before serving.

Slightly toast the cumin seeds and black peppers for 30 seconds in the hot pan, and add them to the mortar.
Grind the piquin peppers, cumin, black pepper, and the oregano until you have a very fine texture.
Heat the oil in a pan. Once the oil is hot, stir in the onion and garlic. Sauté until they start to get a golden color around the edges.
