A low budget, low fat, easy and delicious salsa. You can add as many or as little veggies to your taste. This can easily be multiplied. Serve with crackers or tortilla chips.

1 (5 ounce) can tuna in water, drained
⅓ cup chopped onion
⅓ cup chopped tomatoes
⅓ cup minced cilantro
1 small jalapeno pepper, seeded and minced
salt and pepper to taste

Steps:

  • In a medium bowl, stir together the tuna, onion, tomatoes, cilantro, and jalapeno. Season with salt and pepper. Refrigerate until serving.

Our family loves pico de gallo for its burst of flavors, but also for all of its uses-a topping for tacos, a dip for chips, a mix in for huevo a la mexicana, and in this case, tuna's perfect match! We've made chips perfect for dipping with our Grain Free Almond Flour Tortillas, and we've added a bit of spice by drizzling our Whole 30 Approved Habanero Hot Sauce on top. Pico, pico, ¡Que rico!⁠

10oz Canned Tuna, drained ⁠
½ Roma Tomato, diced small⁠
½ Jalapeño, minced ⁠
¼ cup Red Onion, diced small ⁠
3 tbsp Fresh Cilantro, minced ⁠
2 Limes, juiced ⁠
Salt and pepper to taste⁠
4 Siete Grain Free Almond Flour Tortillas, cut into quarters ⁠
Lime Wedges⁠
Siete Habanero Hot Sauce ⁠

Steps:

  • In a 350 F preheated oven, bake quartered tortillas flat on a baking sheet. Bake for 10-12 minutes or until golden brown. ⁠
  • Mix tuna with jalapeños, tomato, red onion, cilantro, lime juice, salt, and pepper.
  • Serve with tostadas, lime wedges, and habanero hot sauce.

This is a really tasty, low-fat salad recipe that I found in the Chicago Sun-Times, originally from the Miraval Spa in Arizona. Prep time includes the 30 minute chill time.

1/2 lb peeled cooked medium shrimp
1 cup chopped tomato
1/4 cup chopped red onion
2 teaspoons minced jalapeno chile
1 tablespoon minced fresh cilantro
butter lettuce (optional)
6 ounces nonfat sour cream
1/3 cup low-fat cream cheese, softened
1 1/2 tablespoons fresh lime juice (from about 2 small limes)
1/2 teaspoon sea salt
1/4 teaspoon white pepper

Steps:

  • Combine shrimp, tomato, red onion, jalapeno and cilantro and refrigerate while dressing is prepared.
  • For dressing, combine all dressing ingredients in a small bowl and whisk until smooth.
  • Gently stir dressing into shrimp mixture; refrigerate for 30 minutes before serving.
  • I serve this in bowls lined with butter lettuce.

6 ounces canned tuna
1 whole eggs (lower in fat) or 3 egg whites (lower in fat)
1/4 cup raw oats (I use quaker oats)
1 tablespoon taco seasoning
2 ripe tomatoes
1/2 white onion
1 jalapeno
2 tablespoons lime juice
1/4 cup cilantro
salt
pepper

Steps:

  • For the patties.
  • Drain tuna well (too much water will make the patties crumbly)! add egg,taco seasoning and slowly add the oats until it becomes a formable consistency. Form into 2 patties and pan fry in olive oil until golden brown.
  • For the pico de gallo.
  • dice all ingredient and mix together.
  • put pico de gallo over the patties and enjoy.

1 teaspoon(s) liquid smoke flavoring
- crackers, (your favorite)
